Great ambiance with friendly and helpful staff, great selection of whiskeys with knowledgeable guidance by passionate people. The food is excellent and beautifully balanced, if a bit on the safe side. Still early days for this venue, I felt at home and can picture chilling with a drink and some excellent food from the kitchen. Give it a shot.

An impromptu last minute dinner result us in Smith Street and coincidentally parking was available in front of this corner venue(The Noble Experiment). Not knowing what to expect, our waiter guided us through the menu and instead of the feast where the kitchen give us a selection of their specials, we decided to go A la carte. Staring with the pigs head croquette with Jalapeño, I have to say I really enjoy this. It was crispy on the outside and soft and moist in the inside. But you could also feel the texture of the pork and jalapeño. A great start already. Then we had the pan fried John Dory with curry coconut sauce, lemon purée and seaweed. I did feel like a curry, but the sauce was minimum and you can definitely taste the coconut curry, the lemon and love the seaweed with it. The dory was cooked well. The smoked asparagus, Asian mushroom and tea cured egg yolk was delicious. You can definitely taste the smokiness of the asparagus with the saltiness of the mushroom and googy yolk, it was a great combination, one that I would have never thought about. Next we had the sous vide duck breast, which the duck was cooked very well, but compare to the other dishes, I felt this dish was not seasoned as well but it was still delicious. We decided to share a dessert, Gin compressed watermelon, lychee gel, yoghurt parfait, lime+mint+cucumber granita. Definitely a lot of component to this dish and every component was delicious. First impression is that its colourful and first bite was refreshing. It was light and didn’t feel like you are eating a bucket filled with sugar. Our initial waiter, Nick was awesome, he was funny and seems very knowledgeable on the menu, however we later had a different waitress who couldn’t even tell us what she is putting in front of us and she was leaning between our table and the table next to us and she brushed herself against my friend to do so without so much as an apology. However even with the tiny bit of negativity, this is definitely a place worth visiting and I will definitely be back for deliciousness…

We ordered one of the Noble Feast of Beef brisket to share between the 6 of us and it was amazinggggg. It came with the most delicious potato salad, coleslaw and steamed buns. The beef brisket came in a huge platter and there were about 3 large pieces of meat each. The beef brisket was super tender and the sauce was tangy with a ever so slight kick to it. I wish they would give us more of the steam buns though but in terms of portions, it was extremely generous. We also ordered these amazing potatoes and carrots as a side. For dessert, we shared the yuzu marshmallow & a watermelon gin granita dessert. We all voted for the granita dessert as it was light and refreshing after the very rich meal, and we all found the yuzu marshmallow a bit too sweet. The service was super friendly and as we dined quite early(5pm), the food was quick to arrive. We will definitely come back.

Went there last night w a group of girlfriends. I have recently been diagnosed w some pretty annoying food intolerances — low FODMAP, dairy and gluten. These guys were able to accommodate me suitably and really well. The only thing that was hard was dessert, so I had a martini instead. For my friends who could eat everything, they said they had a thoroughly enjoyable meal — apparently the beef cheek was a standout and I could eat the lamb shoulder which was cooked perfectly. Thanks very much to Kirsten our server who was so helpful. Highly recommend!

Try the chefs menu –it’s absolutely amazing! The brussel sprouts were unbelievably good & that’s coming from someone who isn’t a massive fan of the old brussels. Everyone at our table had a fantastic time, and unanimously loved the place. The staff were exceptional, knowledgeable and demonstrated a true passion for food. Highly recommended.

Agent 284 is done & dusted with The Noble Experiment standing proudly in it’s place. The owners informed me that The Noble Experiment was named after the 1920’s ban on drinking liquor(prohibition y’all), with the décor fashioned on the idea of an early 20th century drinking house(think stripped back walls, dark timber & low lights). The lower basement level is still being tweaked, due to open a couple of months, and the street level dining area has changed focus(US fare) with new chef, Cameron Bell, adding some fresh ideas & flavours(brunch on weekends only). The Mezzanine level Cocktail Bar is of most interest to me, an avid whiskey & bourbon enthusiast, with 4 barrel aged cocktails on offer, along with 4 bottle, 2 carbonated and 1 on tap(with skilled bartenders to make you most anything your heart desires). Dark leather chesterfields & smooth tunes create a winning formula! It’s a yes from me! NB: image used off of website as venue was so dark & mine were hideous!(Read: I was too busy drinking)
