With the popularity of American BBQ on the rise in Melbourne and the cost of it going up in restaurants, it’s good to be able to BBQ at home. Finding American cut brisket in Melbourne is tougher than I thought it would be. After doing a ton of research, I narrowed my list to a few butchers and decided to give Cannings Hawthorn a call. I was put through to the main butcher to describe how many people would be attending my BBQ and the very knowledgeable butcher was able to order a 6kg Cape Grim, organic beef brisket for me for pickup the following week. We cooked this glorious side of beef with a simple 60⁄40 pepper/salt rub in our kamado low and slow for 14 hours and our friends are still talking about how delicious it was. Two months ago! We’ve ordered a smaller one for Christmas. They also do free delivery Melbourne wide on a weekly schedule, so that’s very handy if you live in a slightly outer suburb.

If you’re a meat-o-saur and food lover like me, you’ll understand the importance of having a great relationship with your butcher. Someone who is great at giving cooking advice. Someone who is open late on weeknights. Someone who can get you a specialty cut of Black Angus, a large Christmas ham or perhaps a partridge in a pear tree… Okay, so maybe Cannings can’t get you the pear tree but they will try to help you out with just about everything else. They have a fantastic selection of free range, hormone free meat as well as all manner of general meat cooking accoutrement like stock, meat rubs and sauces. They’re friendly, helpful and now and then they cook gourmet sausages on a BBQ out the front of the store and the entire neighbourhood is tortured by the amazing smells.
