During a six-​week stay in Carcassonne, we had a chance to sample the wares of at least a half-​dozen bakeries. Our favorite by a large margin was Boulangerie Noez. Their breads are delicious, whether we wanted a simple baguette or something more complicated. They were also the only bakery we found that offered so many variations of bread: whole grain, an amazing walnut round, a sesame baguette, another with a variety of seeds that we had first tasted, coincidentally, at one of our favorite restaurants in town. It doesn’t hurt that Annette, one of the owners, speaks English, but the bread would be outstanding even if the only language they spoke was Klingon. I can only wish we had a bakery this good — and this inexpensive — at home.
