Frédéric Cassel

Frédéric Cassel ist ein Chocolatier der in Fontainebleau gegründet wurde und mittlerweile auch in anderen Städten Niederlassungen eröffnet hat. Hier gibt es natürlich, wie der Name schon verrät, verschiedene Sorten von edler Schokolade: Pralinen, Trüffel und auch Block-​Schokolade.
Das Geschäft ist klein, aber sehr fein. Gleich am Eingang ist die Theke mit verschiedener Schokoladensorten, deren Anblick dich nicht mehr loslässt und zum sofortigen Einkauf verleitet. Ich war aber artig und habe nur eine kleine Schachtel gekauft, aber die war am nächsten Tag schon aufgefuttert.
Sehr besonders lecker fand ich jedoch die Kreationen nicht, um ganz ehrlich zu sein. Ich liebe Schokolade, aber ich mag sie einfach. Zu oft werden verschiedene Zutaten hinzugefügt damit es als ‘edle Praline’ rüberkommt, wie zu viel Alkohol, Marzipan, Gewürze, usw. Das schmeckt für mich dann nicht so gut, wie eine Nougat-​Praline oder Crocant-​Schokolade. Ich sag mal Geschmacksache und lass es dabei.
Trotzdem ist die Schokolade natürlich sehr bekannt und das perfekte kleine Geschenk für die Heimreise.

Every time I passed by this place on my way to LCL, I always stares at these amazing looking desserts for a long time. I gave a four stars just by their look. Their savory section such as the salmon tart looks colorful and amazing
However, I bought their pistachio and café macaron. I feel it’s extremely sweet and sticky inside. I didn’t enjoy it much because I could only taste sugar inside. I heard some shop in Paris is a lot better called something like Pierre Hermes.

Cassel’s products are works of art, and they taste good, too. The almond croissant is their best kept secret!

The biggest problem with Cassel is inconsistency in taste. I live across the street from them, so I get a chance to taste something from the store pretty much everyday. On some days, their macarons are better than Laduree or Pierre Herme. On others the same macarons taste like frozen junk. So if you are ok with gambling on your taste buds be sure to try this place.
Other than macarons, they make a pretty good tarte citron and hazlenut millefeuille as well. If you are around early in the morning, their breakfast quiches are quite tasty.
Given the lack of options in this town, Cassel will continue to garner lots of business but it’s not necessarily because they have the best product.

La grande classe. Un peu cher, mais très bon. Pas grand chose à redire, craquez pour quelques mini desserts, cela fait toujours son petit effet :)

Amazing place – and I’ve not even tried the macarons yet. Even straightforward fare, like pain au chocalat, is utterly marvelous. And then there is the chocolat proper. An impressive array of wonderful treats. You won’t regret stopping in. And then coming back.

When I moved to France for year, everyone (including my «1,000 Places to See Before You Die» book) said that I had to go to LaDuree on the Champs Elysees. I thought it was pretty amazing until I found Frederic Cassel. Yes, Cassel is better than LaDuree. The macaroons and desserts seems a little fresher and a little less dry. and it seems like less of a «dessert factory» where Cassel puts more into each thing that he makes. He even took one of my classmates under his wing as an apprentice because she showed such an interested in chocolate!
I was super lucky that this place was in Fontainebleau, where my school was located. There really isn’t much at all in Fonty, as we call it, but this little gem more than makes up for that.

Attention excellence !! Si vous souhaitez goûter du très très bon, vous pouvez y aller les yeux fermés et la bouche ouverte (ou l’inverse, au choix) Frederic Cassel ravira aussi bien vos yeux que vos papilles !! Chocolats, Pâtisseries ou macarons, absolument divin ! Né pas oublier les glaces maison et les petits biscuits pour le goûter des enfants.

This place is really good; many would argue it is the best. It is one of the best bakery chains in France and is legitimately, justifiably famous. The apricot-​flavored Rousillon dessert is my favorite. The Chausson au Pommes is also very good, but it has to be the most expensive place in Fonty. For my money, I think Dardonville is almost as good or as good depending on the dish and literally 40% cheaper. Cassel does do a better job of merchandising and packaging.

eh bien malheureusement les choses changent… et c’est tout à fait dommage. Cassel, ce n’est plus –aussi bon– qu’à mon arrivée à Fontainebleau en 2001. La «maison» a d’autres ambitions semble-​t-​il et oublie de regarder le baromètre bellifontain, de prendre le pouls de ses clients fidèles (dont je fais encore partie). Le salon de thé, rue des Sablons, est devenu glacial –au sens propre et au figuré-​; on y déjeune mal, c’est franchement mauvais et le «bonne dégustation» lancé par une responsable un peu –raide– bloque la déglutition de cakes souvent trop secs… Il y a moins de monde chez Cassel et j’en suis triste car il est toujours triste de constater un manquement le plus élémentaire quand on vise la qualité, à savoir: la satisfaction des clients et leur écoute. Les bellifontains aiment les bonnes choses; il né faut pas leur faire prendre des vessies pour des lanternes et c’est un peu ce qui se passé chez Cassel. Difficile d’être partout à la fois; parfois il est nécessaire de revenir à la base et de s’assurer de la satisfaction des clients. Toute démarche –qualité– passé par là, d’abord. Alors, de grâce, Monsieur Cassel, écoutez-​nous au lieu de prendre nos remarques –de très haut-.

Simply the finest macarons in the world. Far better than Laduree and none of the tourist element. They melt slowly in your mouth with the perfect crumble: creamy texture ratio. A delightful treat after a day of rambling through the forest or around the palace!

Simplement les meilleurs macarons dans le monde. Mieux que Laduree et sans tous les touristes. Ils fondent lentement dans la bouche avec le crumble: créme ratio parfait. Un vrai régal après une journée de randonnée en forêt ou autour du palais!

Excellent, rien a dire, tout est bon pour les papilles et les yeux aussi. Les prix, oui c vrai c est un peu cher, mais bon c’est tout a fait justifie. Et les macarons sont meilleurs que chez laduree, moins écœurant.

Si vous passez par Fontainebleau et que comme moi vous êtes fan de macarons, vous né pouvez pas né pas vous arrêter dans cette pâtisserie: des purs délices et un choix extraordinaire de parfums. Le pâtissier est un ancien de chez Fauchon, il fait plein d’autre chose et possède également un salon de thé dans cette même ville (non testé).
