This is a very good rendition of American food in Paris. The meats are smoked and flavorful. In other words, the meat isn’t just grilled and doused in KCBBQ sauce. Its the real thing. The ribs and beef brisket were both well done. The pulled pork was good too. Also well done: mac & cheese(though small portion), jalapeño cornbread, and great french fries. The only nitpick I can think of is that maybe the coleslaw needs some work and they should offer garlic bread /texas toast as a side. Go to this place and order a Miller and eat some BBQ.

I have to assume everyone who gave this place good reviews has never had good bbq ribs in their life. I read one review of a Texan who came here and i decided to trust his rating. WRONG. We sat down and saw that the fries on other peoples table looked dry, so we opted to get beans instead. The beans were BARELY even cooked and pretty much solid. that is a joke because that is the opposite of how baked baked are suppose to be. Now to the main part, the ribs. The portion is a midget, and I am not sure why anyone commented and said its big portions like america. The ribs were okayyyy. Definitely not fall off the bone, the ribs itself were small and some parts were dry. the only good part is that the bbq sauce was pretty good. It is places like this that confuse me when people give it good reviews. Americans should know good bbq, but seriously i have no idea what type of americans think the ribs here are good. do yourself a favour and go to a REAL bbq restaurant.

After reading the NY Times article about BBQ in Paris(by Alexander Lobrano, pics by @alexcretey) Blues Bar-B-Q went to the top of our«must-try» list. Texan owner Ms. Diana did not disappoint! The Montana steak brisket with burnt ends was tender and smoky, while her BBQ sauce had just the right mix of sweet and savory. Definitely the star attraction! Jalapeño cornbread had a slight kick yet was still sweet, while the piping hot corn on the cob was dripping with buttery goodness. Ribs and sausage were tasty too. And the pecan pie left us looking forward to a return visit. Also happy to say they have American favorites like milkshakes, Bud and Dr. Pepper. So nice to find this little piece of Americana here in Paris!

Enfin un diner qui vaut le coup ! La plupart des chaînés de diners en France se contentent de burgers/frites de taille et de qualité variable. Je suis bien content d’en découvrir un qui propose autre chose. Ca fait plus authentique. Blues Bar-B-Q se concentre, vous l’aurez deviné, sur des viandes typiques des barbecues américains, à savoir brisket, smoked sausage et ribs. Ce qui me semble bien plus intéressant qu’un énième steak haché entre deux morceaux de pain. On a donc le choix d’une, deux ou trois de ces viandes dans notre assiettes. On peut aussi choisir un rack entier de ribs. Il est éééénorme, vous avez intérêt à avoir faim. A cela, on ajoute un side de notre choix: mac’n’cheese, frites, cornbread, salade … Pour les petites faims, des sandwichs au pulled pork, au poulet ou autres hot dogs sont proposés. Enfin, la «RIBFEAST» pour deux est un super choix. Il comprend: un rack entier à partager, du coleslaw, beaucoup de frites et du cornbread. C’est très copieux, même pour de gros mangeurs. Le seul reproche que j’aurais à faire est le prix un peu élevé. Comptez : — 18 € 1 viande, 23 € 2 viandes, 25 € 3 viandes; — 30 € le rack entier; — 9 € ou 13 € le sandwich avec ou sans frites; — 39 € le RIBFEAST pour deux. En dessert nous avons pris un milkshake. Il était bon. Il valait ses 5 €. Je né me souviens pas trop des autres desserts proposés. Enfin, la déco est très clichée diner américain. Je n’en suis pas fan. C’est beaucoup d’effort pour un résultat moyen. Je pense surtout aux gros fauteuils en cuir rouge. Par contre, j’ai beaucoup aimé la mosaique de portraits de Blues men & women !

I was there for the 4th of July, and was pleasantly surprised. I live much of the time in Paris, but still had no idea that such a place existed. It was great ‘cue. I had the best pulled pork sandwich(cole slaw on the meat in the sandwich) I’ve had outside the South(and I’m a Southerner). It came with real cornbread(not that sweet Yankee cornbread) corn-on-the-cob and a cold beer. I could have been in Tennessee. Only issue at all, lost in the good food, was a very long wait to get served, but I’ll definitely be back.

Un bon petit resto de quartier au fort accent yankee ! La carte est simple, soit viandes, soit sandwichs et quelques desserts… Avec mon amie, nous avons prit deux sandwichs type hot-dogs et une portion de mais grillé pour deux… C’est bon mais gras… Pourtant je suis rarement critique, quand on commande des frites et de la viande, ça né sera pas light j’en ai bien conscience… Mais la, vilaine sensation de partir en soirée et de sentir le «graillon» comme on dit chez moi… Ethymologie de «graillon» pour ceux qui n’aurait pas saisi: le gras grillé/brûlé au fond de la poêle… Tout ça pour 30 €, je trouve la note plutôt salée… Déçue, déçue malgré une déco intérieure soignée très «grease» et une serveuse US très très sympa ! ! Vous l’aurez compris je n’ai pas adoré et continue à chercher le diner US parfait…

I grew up in North Carolina, and ate my way across all southern states so BBQ is something very near and dear to my heart. One thing is for sure, BBQ is like Jazz, Art, and other mediums that depend on the creativity of the maker. Sure there are different styles, but ultimately you are in the hands of the creator. Each chefs style is different, so going to the meal with an expectation from previous experience is your own set-up for disappointment. With that in my open mind, I joined a few friends(French and Swiss) who had never had BBQ before, so of course they wanted to try several dishes. In my experience, Europeans don’t normally eat family style when in a resto, so this part was discussed ahead of time as «part of the experience». We had ribs, beef and pork brisket, and several of the sides: beans, cornbread, slaw, etc. and of course someone had to order the gumbo(just ‘cuz). These guys know their stuff. There’s a depth to the spices, and tenderness to the meat that comes from thoughtful attention and experience. The fresh baked cornbread was a bit spicy for my taste, but the crumb and flavor was great. The slaw was crisp, light and fresh with their own mix of tangy flavors. We had a few of the desserts, but I have to say the Pecan Pie was the clearly the winner. Décor was a bit kitchy, but in a reverent way. Then again most BBQ joints outside of the south play up the«southern charm» as part of the experience. Bonus points: it’s really funny to watch a French lady trying to eat ribs with a knife and fork ;-)

Passez la porte et vous n’êtes plus à Paris. Mais quelque part entre le Texas et la Louisianne ! Dans ce décor de dinner, sur fond de blues ou de country music, on savoure les meilleurs ribs de la capitale. Toute la viande est fumée sur place pendant des heures: ça fond sans la bouche et la sauce barbecue vous fait perdre la tête. Le cornbread au jalapeño et la ratatouille aux gumbos vous ferons oublier la ratatouille de votre propre mère. Les desserts sont aussi copieux et bons que le reste. Préférez les haricots noirs + Louisianne gumbos aux frites. Sur place ou à emporter. Ça n’est pas très bon marché mais c’est vraiment excellent et de qualité. Enfin le service est attentif et souriant. Et vous pourrez pratiquer votre anglais avec Diana, la patronne !!

We have been here a week and we were looking for something different and found this place. Thank god! The ribs where fall off the bone cooked perfect and taste was great smoked! I have had a lot of BBQ and I am here to tell you that these are the best! My family is from Texas and I have spent a lot of time there over the decades and southern food wether BBQ or real Mexican is always good but damn this was great! If I could open a chain across euro I would. And they have real shakes too! Cornbread was jalapeño and I don’t like hot stuff, white guy lol, but this CB was perfect flavor and just melted. All the food was perfect can’t wait to get back. The owner is a nice lady and speaks English! I love her! She knows how to cook and if some of you got bad service she might not have been there but tell here she loves what she does.

Incontestablement cet endroit est bien situé, bien décoré et le service est sympathique, avec une touché d’accent anglais à la caisse qui fait du bien… Les ribs sont vraiment bons(leur sauce BBQ fait tout!!!) Bémols sur les burgers et sur les frites: burgers sans fromage je trouve ça vraiment dommage et celui au porc est vraiment sec! On né sent que la sauce barbecue quel que soit le burger qu’on mange… comme pour les ribs… sauf que des ribs ça né me dérange pas qu’on sente beaucoup la sauce car c est associé au plaisir primaire de manger avec les doigts mais dans un burger sans une autre saveur avec ?! Dommage! Ah oui et sandwich seul 8e20 a emporter, avec frites’…14e!!! O_o jamais vu… surtout que les frites né sont vraiment pas folles ! Bref y aller pour les ribs mais pas pour le reste(prendre d autres sides que les frites!!!)

To put my forthcoming review into perspective: We have eaten here before, and the food was excellent. It’s the reason we came back today for a late-ish lunch. We were told about Blue’s BBQ by some friends as part of an Ex-Pat group on Facebook. That afternoon, we were approx 21 people and the place was ROCKIN’ mostly due to the Ex-pat group meetup event. Ah, today… So disappointing! We were 6 people, the place was empty with only 4 other people at one of the tables. Saturday, decent weather and locals are back from vacances. We ordered, that went fine as long as we spoke slowly. The rootbeer floats arrived, the cans of soda arrived but we could not get a carafe d’eau to save our lives. I asked FOURTIMES. Mind you, not crowded. First problem with the food happened, where they bring out one person’s food at a time with WIDE intervals in between. My first friend’s salad entrée arrives, then her baked potato arrives. Then fifteen minutes pass and nothing for the rest of us, her food gets cold. Finally, another baked potato for another friend arrives with his large order of mac n cheese. More nothing, ten mins. They aren’t eating because they are waiting for us to be served, too. We start munching on his mac n cheese, because we’re starving and the food smells are killing us. Fifteen minutes pass, a smoked hot dog comes out and then more nothing for ten minutes and finally his wife’s pulled chicken burger comes out. I’m still waiting, my husband is still waiting. The first few people have nearly finished their food now. I ordered the BBQ pork ribs. My husband ordered the beef brisket burger. But, hey. We don’t really WANT to eat with the rest of our table, naaaaah. We’re still waiting. 30+mins after the potato/salad arrived for the first person served. Meanwhile, the chili cheese fries that they advertise(bring three friends and get FREE chili cheese fries!) on their website FINALLY arrive. Except, they are smothered in Jalapenos. NOONE was ever asked if we wanted jalapenos, and last time we ate there, this was not the case. I HATE jalapenos! My husband doesn’t like them, either. The fries were covered in them. Gross!(this ingredient is NOT listed on their menu as a topping, either) Waitress, comes out with my ribs, cornbread, macncheese. Last time, the cornbread was a toasty brown and light with a good texture. This time it was a pale yellow brick-like lump, and MOREJALAPENOS baked on top. Had no taste, not even the peppers could save it. The ribs, travesty. No one should be allowed to make ribs if THIS is how they cook them and try to pass it off as BBQ. They were not marinated, they were as if you went to the auchan and bought a tray of pork ribs, baked them in the oven and as an afterthought when they were being served splashed some shitty no flavor BBQ sauce on top of them. Now… The whole POINT of BBQ sauce is to imbue the meat with flavor. It won’t do that if you just squirt some cold sauce on the meat before it hits the table. You Baste it on the meat and BAKEITON. FFS. BBQ101, people. Also, bbq sauce should either be sweet or have a spicy kick to it. This had neither(mainly due to the sauce not being heated in any fashion, much less allowed to properly caramelize on the meat while cooking) spice nor a tangy sweetness. Still with me? Okay, good. STILL no carafe d’eau but my husband finally gets his dinner. OH, but they are OUT of MAC N CHEESE. Are you kidding me?!? Saturday afternoon, and you are OUT of the only decently tasting thing on your goddamned menu!!!(keep in mind another friend got his order, and ate it and we all tried it. SO they HAD it, and NOONE came there to eat after us… soooo. where did it go? they had only One Serving and they didn’t Know??) He gets instead the ‘Texas Beans’, as the corn salad was ordered by another friend with her chicken and it was disgusting and no one ate it. ‘Texas Beans’- Was that a prank? Taking a can of kidney beans, stirring in some water with taco seasoning does NOT make TEXASBEANS. FFS. Molasses? heard of it? BAKINGBEANS? Heard of that, either?! They were near raw, even though the little ramekin they were served in was hot. So, canned beans were reheated in a microwave or something, because yeah. Was this a joke? I felt pranked, and not in a good way. Milkshake, Strawberry– Good! Rootbeer Float– Good(but how do you f-up canned rootbeer and a scoop of vanilla ice cream. so, yeah) Corn ‘salad’- No. Just, don’t. You’ll thank me. Mac n Cheese– Worth the hassle! Cornbread– Nah, not even close. Great the first time, utter shit this time. Pork Ribs– BBQ sauce not baked on, flavorless goop splashed on the meat cold. Meat not marinated. Just herbes de provence and salt on the meat. Smoked Chicken– Good, best dish we tried. Still a bit meh. Smoked hotdog– Very much as advertised, dog on toasted bun. Beef Brisket Burger– Good! Surprising considering. Not enough sauce, though.

I was pretty happy when I finally made my way over to taste Blues. I’ve seen a couple gripes in the reviews but hey, we’re not in Texas, we’re around the corner from Bastille-gotta take what you can get! in any case, I thought my ribs were delicious, the sauce was tangy and the meat fell right off the bone. The cornbread was great too! I found the beans to be mediocre and the prices a little too high to give this place 5 stars though. The service was friendly, polite and quick which is always appreciated around here. I’m just waiting for another excuse to go back!

Look, this place is very good for BBQ in Europe. Give them a try — the proprietor is very friendly, which by itself can be refreshing if you’ve encountered one too many rude people on your trip. So if you find yourself in Paris and haven’t had BBQ in a while, this place will definitely fit the bill. But if you’re looking for Franklin BBQ or Kreuz Market transplanted into Europe, well, you’re going to be disappointed but you are also being very unrealistic… this is very good for European BBQ(I’ve been to 35 or so European countries, and this is so far the best BBQ I’ve had on the continent). Stick with the ribs and the pulled pork, they’re their best items. Oh, and they have Dr. Pepper. Yes, they charge 3 euro for the DP, but let’s be honest, when it’s been a while, you’d gladly pay double that. Also save yourself some money with the 2-person meal deal.

Okay, they advertise real American BBQ, but this sad panda is sad to report that is a lie. They are overpriced, the food isn’t great, and they are stingy both with portion size and BBQ sauce. The macaroni and cheese has no flavor. The Texas beans weren’t traditional baked beans, more like bean only chili, had to actually drench it in BBQ sauce to approximate the taste. Had to ask for BBQ sauce, the service is slow, took as long to get drinks as it did to get the food which is ludicrous. The Kansas city style beef is dry, not BBQ’d more like bought cooked from a butcher and lightly basted in BBQ sauce. The best thing on the menu flavor wise and portion for value size is the chili cheese fries. Sad crap for an America on the 4th in a foreign country. A mcrib is more BBQ than this place was. Oh yeah and it’s ridiculously hot in the restaurant, sweating in there while starving. Sad panda.

We were excited at the prospect of a good BBQ in Paris but unfortunately we were let down at every turn. I should have known when we ordered as I listened to the manager or owner tell the young American waiter to put more ice in our sodas as ice was cheap. Nonetheless our sodas were all flat and when I informered the owner/manager he said«yeah that just happens with the diet sodas» and went back to watching the football on his computer on the counter. So we had ordered the pit beef and chicken sandwich which I watched being heated in a microwave and served. They were not all that tasty, they were served in a basket with French fries(additional € 2.50) the same crap fries you get at any sandwich Grec eatery here in Paris. I found the two waiters very friendly but nervous around the owner/manager and still got charged for the flat sodas. It was awful here and we had brought a Parisan friend here for dinner only to get ripped off and made feel like we were an inconvence to the person watching the football game… NEVERAGAIN

It was a meal I had been anticipating for days. About to start the insane phase of training for the 10k du 19e race, I wanted to taste glory for the last time in the weeks to come. I coerced a few friends: an Spaniard, two Americans(one from ny and one from Atlanta) and a Brazilian gal, to come with me. It didn’t take much convincing when I told them we were going to a seemingly authentic barbecue joint. Upon arrival the neon«diner» sign and the blues rifts drew us in sheepishly, I guess we skeptically anticipated some American cliché caricature of a good barbecue joint. However, as soon as those waves of parfectly seasoned BBQ aromas started wafting out way… we were convinced. We got chilli fries, pulled pork sandwiches with cole slaw, Mac and cheese, jalapeño cornbread, and root beer floats to go around! The service was slow, but it was quite a feat for the one lonely cook that seemed to be running the kitchen. The meals were handsomely sized; in the gray area between what the French consider obscene, and what the Americans consider satisfying. Needless to say we were all happy campers, and to top it off we shared warm brownies a la mode with a delightful peach cobbler which were both to die for. We’ll do all the explaining to a cardiologist some other day. Today we dine in pork heaven!

Had the beef brisket and it definitely brought back memories of my road trip in the US. Not enough BBQ sauce on it tho. The vegetable gumbo was alright, the beans could definitely be better. Downside: We didn’t notice they had a 2 person meal deal and the server didn’t let us know, even tho what we ordered was exactly what was included in the deal and it would have been cheaper for us. The portions could be bigger.

Un petit coin d’Amérique tout près de Bastille Personnel très accueillant, nourriture de qualité et prix vraiment doux. Les menus pour deux sont parfaits, pour un peu plus de 10EUR on se fait vraiment plaisir, c’est bon, et copieux. Si je devais émettre quelques réserves ce serait pour les frites qui pourraient être plus originales compte tenu de la qualité de la viande, et la présence d’une formule boisson à volonté né ferait pas de mal !

My wife and I picked this restaurant to eat at simply because it was one of the few restaurants in Paris in which we could get a turkey dinner on Thanksgiving. We were very thankful that it was there and serving the special menu! Otherwise, everything on the menu actually looked quite reasonably-priced for Paris, and I would definitely like to go back and give their pulled pork sandwich a try. It was so relaxing to eat at a restaurant where American English is the native language! Minor note — I was quite surprised by the number of French folk partaking in Thanksgiving dinner here! For American home-style cooking, this is «As good as it gets!» in Paris, but it was just not quite five-stars. Keep in mind, my experience was outside the norm, but I think the Thanksgiving crowd they had was just a bit too much for the one waitress, and the special menu demanded a special price — this was one of the most expensive restaurants I ate at in Paris, but hey, when they got the market cornered, they can charge whatever they like, I suppose.

I think the bad reviews of this place def. have to do with initial expectations. I love BBQ. My dad is from Kentucky, my mom from Kansas City, and I have spent a lot of time in the South. I know good BBQ. You cannot expect the BBQ in Paris to be EXACTLY the same as what you enjoy in the US. The ingredients are not the same, the meat is not the same, and the space in which they cook is not the same. You can’t get a permit to store a smoker in a Parisian alleyway… With all of that said, I do think Blues does a good Parisian version of BBQ. I have tried a couple of different things there – the pulled pork was very good, if the sauce a bit acidic for my taste, but the ribs are excellent. They were spiced just right, and as tender as one could dream. The cornbread seems to be hit and miss – on one visit it was forgettable, on the next addictive. I hope people give this place a chance – I think a lot of the negative has to do with whatever product the butcher decides to bring them that day. But the service is excellent, the atmosphere comforting, and the food on it’s way up. Please go so it can stay open, and I can drop by when feeling homesick :)

«Pense à ces ribs fondantes et caramélisées qui te collaient aux doigts après une journée épuisante de marche à Yellowstone… mmh… mmmmh…» Voilà la petite voix qui refuse de se taire depuis presque un an, et m’amèné parfois à pleurer, le soir, au souvenir d’un plat à tomber par terre que je doute de pouvoir regoûter un jour, sauf à retourner au même endroit. Bön, j’en rajoute un peu, mais l’idée est là ! Autant dire que mes attentes étaient du genre élevées, en allant au Blues Bar-B-Q. La raison de ma déception? Peut-être… Voilà qui explique en tous cas la réception relativement froide de nos amis anglosaxons, et la tolérance des amateurs de cuisine américaine qui né sont encore jamais allés déguster un barbecue sur place. Oui, la viande est plutôt bonne, relevée par un petit goût de fumé. Oui, la sauce barbecue(maison ou non, je n’en sais rien) est très appréciable. Mais il n’y a pas de quoi se jeter sur son plat, ni mourir d’envie d’y revenir. Mes ribs étaient un peu sèches, et en aucun cas caramélisées. L’accompagnement était très moyen(des beans réchauffés, un pain au maïs archi-sec). Le décor est très basique, malgré la volonté de recréer un B.I.A. L’accueil est correct, mais pas de quoi sauter au plafond, surtout quand on a goûté à l’inégalable et chaleureux enthousiasme américain. On n’a pas encore trouvé le «vrai» barbecue américain de Paris.

Je voyais beaucoup de très bons avis en Français, et des avis moyens en Anglais: Normal Après avoir essayé, j’ai eu la même sensation qu’après mon voyage au Japon: Il me sera impossible de m’extasier avec des sushis à Paris Eh là c’est la même chose, après avoir essayé des diners aux États-Unis, Le Blues Bar-B-Q n’a rien d’exceptionnel… J’ai essayé les Rib’s de porc, qui étaient bons, mais qui né venaient pas directement d’un … BBQ et ça se sentait bien à la texture, du réchauffé. Mais ça se laisse manger, prix très raisonnables 24 € pour deux avec des frites, et des beans(en boîte quoi) et du Corn Bread sans trop de saveurs Par contre je dois avouer que la sauce BBQ était délicieuse, à s’en lécher les doigts. La déco n’a rien d’exceptionnelle, on né se sent pas vraiment dépaysé. Mais attention, je suis peut être un peu méchant, parce que c’était quand même bon, seulement, j’en attendais plus.

I really wanted to love this place. I really wanted to have a place in Paris with great bbq. The beans were really good. The coleslaw was good. The pork was okay. Smoky flavor. The gumbo tasted like soupy ratatouille, which was how it was described on the menu. The cornbread was tasteless. All in all, it was a disappointment for native Southerners who know good barbecue.

After reading a few rave reviews of Blues BBQ, we decided to give it a shot… and despite everything starting off well with a warm welcome and the wonderful smell of BBQ sauce as we entered, the food left a lot to be desired. I got the pulled pork sandwich, which seemed exceedingly acidic and the texture was lacking. Not fatty enough and too tough, definitely not what I look for in a pulled pork sandwich. I got the sides of beans and corn bread… the beans were decent but a bit heavy on the pepper and the corn bread was heavy and used canned jalepenos. I tried a bite of the ribs as well, and while the texture was decent, also nothing special going on. Lot of sauce, but no indications that these were marinated for a long while, and certainly there was no smoking of any of the meats(although this isn’t surprising). Not to mention the ribs plate was at 13 euros… All in all… had good hopes to find decent bbq in Paris, but still searching.

La viande est un peu seche, le travers est minuscule, le pain de mais est tout petit, les prix né sont pas a l’image de la quantité servie. Je testerai de nouveau car la patronne est quand sympa et voir en pleine rush le soir et pas le midi.

Unfortunately, we were really let down :(We were so excited for an American bbq place in Paris and couldn’t wait to sink our teeth into the hot, tangy flavors of Texas BUT this little resto has some basic issues that I hope they get a handle on. 1) The Food– the pulled pork was chewy, i mean way too chewy. It was tough and didn’t melt in your mouth at all. The tomato sauce on top was bland but the bbq sauce in the swirt bottle was good. We waited about 50 mins for a SANDWICH! Shouldn’t have taken that long. We were told the Brisket would take 20 extra minutes and it took 1.5HOURS! That too was tough, dry and overcooked. I’m hoping they had a different chef for the day but the food was almost not edible :( 2) Service– There are only 4 or so tables and the waiter is also multitasking as the cashier but when people wait 1.5 hrs for food you can bring out free bread, cornbread or make SOMETHING happen! She offered refills on our beverages, that was it. Such a great idea to have BBQ in Paris but if you’ve had BBQ in the states you will be let down. I’m not sure if I can even go back :( I hope they figure out their issues and can deliever a stellar product ASAP!

Word… …on the street is there’s this new, authentic bar-b-q place in Bastille — and the the word is right. Ribs, brisket, pulled pork, sausage — smokey goodness. This was one of those experiences where it just seems to good to be true and so we ordered basically everything on the chalkboard menu including: all of the above and cornbread(with jalapeño peppers mixed in!), chili fries, coleslaw, vegetable gumbo and cheesecake. The ribs are good — cooked over 5 hours low and slow… mmmm. Brisket very good also. Sauce is nice and tangy. BBQ in Paris — not common. The place is small and seats only about 20 people and there’s an awning so in the summer it will be nice. Its not over crowded now, but in a year it will have been discovered and it there will be lines. Funny — they do «take out»(not«to take away» ;-) and that business alone is sure to increase. The price is right right now as they work to build their business — so GOTHERE. One suggestion: serve hamburgers — bring in the locals. PS — I’m sure this isn’t pure bar-b-q, but you could smoke them a little before grilling?

OMGWTFBBQ [English version below] Non, c’est pas le meme internet — c’était ma réaction au moment que j’ai goûté le pulled pork(mal traduit comme«porc émincé», c’est en fait déchiqueté) et sa sauce barbecue. Pourquoi cette exclamation? Car c’est vraiment la première fois que j’ai mangé du vrai barbecue en France. Buffalo Grill? Joe Allen? Tu rigoles ou quoi? J’ai chié du meilleur … Ceci est du vrai. La viande lentement fumée. La sauce barbecue sucrée-salée. Les haricots roses un poil piquants. Le cornbread(galette de semoule de maïs) léger et doux. Tout fait par un chef de la Caroline du Sud et une propriétaire de Texas –des vrais Southerners. Mais attention: C’est peut-être un peu trop véritable pour tout le monde. Un jeune homme français est entré et il a demandé s’il peut commandé un sandwich avec du fromage. Il était très insistent qu’un sandwich américain contient du fromage … mais ceci n’est pas un MacDo. Ni un Burger King. Au sud des États-Unis — certainement dans le cadre de barbecue –on trouve peu ou pas de fromage. In n’y a pas de hot dog. Ni de carrot cake. Bön, si tu insistes on sert les brownies et le cheesecake. Mais franchement, il y a une seule raison d’y venir: le barbecue. Oh, il y a une autre raison: la Grolsch à 2,70 €.(Seulement 1 € le lundi soir!) Mais dépêche-toi. Bientôt ils rendront compte que les prix sont un peu trop bas. Attaque ! — Nooo, I’m not talking about the internet expression — this was my reaction the moment I stuffed the pulled pork and barbecue sauce in my mouth. Why the sudden exclamation? I swear, it’s the first time I’ve tasted real barbecue in France. Don’t talk to me about Buffalo Grill or Joe Allen. I’ve shit better food than that. This here is the real deal. Slowly smoked meats. Savory-sweet barbecue sauce. Baked beans with just enough spice. Cornbread that’s light and fluffy and sweet. All served up by a chef from South Carolina and a very sweet owner from Texas — real south-of-the-Mason-Dixon-Line people. But heads up: This might be a little TOO Southern for the general population. A young Frenchman came in and asked if he could order a sandwich with cheese. He was really insistent — despite what was on the menu– that American sandwiches must contain cheese. But this isn’t McDonald’s. Nor Burger King. If you’re in the South, you’re going to find little to no cheese, certainly not in your barbecue. Unlike other so-called American places here, you won’t find any hot dogs, either. Or carrot cake. Alright, if you insist, they have brownies and cheesecake. But quite honestly, there’s only one reason to come here: The barbecue. Oh, and one more reason: Grolsch on tap for € 2.70 a glass.(Only € 1 on Monday nights!) But get down here quick. Pretty soon they’re gonna figure out that they’re charging too little. Get on it!
