I stumbled across Fresh Noodle, too hungry to make it to the restaurant I was aiming for, and I’m really glad I did. My bowl of noodle soup with «the big noodles» (read: thicker, with a heavenly chew factor) and shrimp was exactly what I didn’t know I needed.
The highlights of course were the homemade noodles and broth. So good, and definitely worth going back to try their other noodle dishes! I added a bit of soy sauce to my soup, because I have a sodium problem, but don’t read it as a complaint. The bok choy was a nice touch– really fresh and perfectly cooked. The shrimp were just ok (honestly pretty tasteless/just ate them for the protein).
The servers were nice and accommodating, and this place definitely has good, relatively extended lunch hours for France. Don’t mind the constant slapping sound in the background; it’s just someone’s mother making kickass noodles from scratch.

This place cooks authentic northern Chinese food, esp. noodles ranging from lanzhou style to knife-cut style. It’s also in a great location near the Forum, Cite, and the Louvre.

Their spicy beef noodle is excellent! With fresh ingredients, the soup was really authentic. Meat is very tender and the vermicelli bowl with beef and egg rolls are also delicious.

Looking for a quick bite before dinner, we decided to satisfy a craving for asian food. The food turned out to be so good (and reasonably priced) that we scrapped or dinner plans and kept eating.
In the popular Marais area with many restaurants of all types of cuisines to satisfy tourists and shoppers, Fresh Noodles surprisingly stands out. Their noodle dishes stands out due to their homemade knife cut noodles and fresh ingredients. This was the last place I’d think to find authentic chinese food, but I am happy that I did find it.
