Service is good but food wasn’t great. Pasta was too dry. Risotto was good. Been to many Hyatt operated restaurants but this one is only three stars

My husband and I love Al Dente for quiet intimate dinners. The ambience here is exquisite. Very romantic and inviting. The view is nice, especially at night. The food is always delicious but depending on what you order can get a bit pricey if you aren’t careful. The service is always great. We never have to wait for a server to come around, as they constantly cruise by just in case you need them. They are always very courteous and service is prompt. They also serve lunch during the day. The antipasto style buffet is awesome! Great for business meetings and intimate lunch with the girls or significant other.

«Truly One of Our Favorites!» They food and service was always excellent when we visited. We spent hours sipping wine, eating, and talking story with good company. We love this place and dearly miss it! We haven’t been back since 2002, but we remember it fondly. Since relocating to the Emerald City/Evergreen State we haven’t found anything like it, yet. It’s 2015, so there is still hope!

This restaurant is a lovely place to have a quiet dinner. The corporately tropical lobby of the Hyatt recedes into the background and is forgotten when you step into the restaurant and enjoy the ambiance. The house sent out complimentary cheese pizza slices accompanied by what tasted like tarter sauce and a tomato sauce for dipping. The tomato sauce was bland, and I never could figure out why the tarter sauce? The pizza was polite — a bit more of a robust pizza sauce would have brightened things up. We began our evening appropriately with bubbly. The house sparkling wine was a California label and extra dry instead of brut — a disappointment. The Sterling Cabernet however made up for that disappointment. The dishes we ordered were primarily from the grilled portion of the menu. The appetizers of grilled prawns with a small salad and grilled portobello with a small salad were nice starters; however, the kitchen was a tad heavy with the dressing on the salads. The prawns were nicely seasoned and tender. The portobello was also nicely seasoned, meaty, and easily shared given the size of the portion. We opted for fish, choosing the catch of the day, grouper, and sea bass. Both dishes were excellent. The sea bass was cooked to perfection, tender with just the right bit of bite to remind you it wasn’t mush. It rested on fennel and grilled asparagus and the combination of flavors and contrasting textures was good. The grilled grouper was similarly well cooked and seasoned, resting atop sliced potatoes. The trio of desserts(the Al Dente combination) was a nice way to experience the different items on offer. The panna cotta was wonderful as was the chocolate soup. Both had rich flavors and provided interesting contrasting profiles when tasted next to each other. The richness of the chocolate soup was lightened on the palate by the panna cotta(rich in its own right but from a different lens). The tiramisu, however, was a tad dry and disappointing. Service was prompt and attentive. The restaurant was not busy when we came and parties drifted in and out during the course of the evening. We were catching up on things, lingering, weren’t in any hurry and enjoyed the conversational ambiance. All in all, very nice.

Lovely setting, white tablecloths, smashing lunch buffet(for a price). Food can be really excellent – but not consistent. Really one of the nicer dining out places on Guam just needs more reliability. When it’s good, wow!
