We toured the small but mighty cheese making operation at Carrigaline on a recent trip to Ireland. It’s remarkable what they are able to produce at their size. There was no charge for the tour which was very informative. We finished with a tasting of four cheeses. Each was wonderful: garlic and herb, blueberry, smoked and natural. The natural was reminiscent of Havarti and the smoked had an intense yet enjoyable smokey flavor. How could you go wrong with garlic and herb? You can’t, really. The surprise, for me, was the blueberry. Ordinarily, I don’t like cheeses with fruit in them but this one was amazing! The blueberry flavor was sweet and articulate! Not some raisiny bitterness like I find in other varieties. If you can find it, try it! Perfect for a cheeseboard.
