The Phibsborough crossroads has three great butchers, but this is my favourite.
Byrnes sell most meats, but are pork specialists. They sell pretty much every part of the pig, so if you need trotter or head, this is your place. The service is great; I went in to buy some shoulder for pulled pork, and the butcher told me to come back tomorrow, when he’d have a fresh cut. When I returned, he remembered me straight away and proceeded to saw up half a pig right where I could see it. Fantastic.
Another thing… It doesn’t smell like a butchers in there. It smells of smoked sausage and bacon. You will want to buy their bacon.
