Tre lanterne showed up on my TA as the most decorated restaurant in Cisternino. #1 actually, which is impressive given there are only 66. Pulia Is famous for their meat throughout Italy. The famous local dish is called bombetta. Little rolls of meaty pleasure, roasted in a wood fired oven, dusted with bread crumbs and salt. We had three varieties: the pork, which is pork leg slices, with some fontina cheese wrapped inside, wrapped in bacon, then there was wild boar and lastly buffalo with arugula and cheese. All were delicious. We wanted to sample everything they had, so we went a little overboard, starting with their superb lardo, paper thin slices of pork fat, seasoned with a little pepper and salt. Also had mixed salamis, pulian bean based hummus, some crispy barley dish, pickled vegetables, and oven roasted potatoes, all very well prepared and delicious. The wine was exceptional — local Pulia wine: a Negromaro, selva Rossa reserva. Awesome value at $ 25. Highly recommend this place
