Tenkaippin redefined Ramen for me. The magical kotteri style secret broth of Tenkaippin Honten left a haunting flavor in my brain. The first sip of the broth hit my palate with a question, is that good or bad, pungent or flavorful, with the second spoon the buttery almost bone marrow like flavor started appealing more and more… the slurps getting faster and the speed of eating accelerating to finish the last drop of a broth that is now indelibly etched in my food memories. This taste is not for everyone and even the locals cannot take it more than once in two months. Some say that it is not for the old and weak hearted. Kyoto is a special city and along with the culture and history, I add this humble ramen in the list of things to do when I go back some day.
