I stopped in after receiving a sale notification via their facebook page in late January to begin the process of making my own wine for the first time! I began with a bit of knowledge– having worked for the LCBO for 5 years I had a good idea of what grape varieties I was looking for — I was making the wine for my upcoming wedding this summer. The staff guided me through the process, advised on how much of each type I should plan for, and I left that evening with 2 batches(a white and a red) fermenting away. I scheduled a day to come back and bottle the wine(about 6 weeks later), and the staff once again were a great help in explaining the process to me. I showed up with a friend to help the process along, and we managed to bottle my 60 bottles in no time. We were able to try a bit later that day and while the wine is not aged yet, it was a good«sneak peek» into what to expect from the varieties. I’m looking forward to enjoying the wine in a few months when it’s fully aged and ready to go!
