Quelle heureuse découverte à Sherbrooke ! En plus il y a deux Siboire dans cette ville de l’Estrie(l’autre est Boulevard Jacques Quartier). Génial ! Les bières de la microbrasserie sont vraiment de très belles qualité, et il y en a pour tous les goûts. J’aime l’amertume alors l’Inspiration 69 a eu ma préférence. L’ambiance est jeune et décontractée. On peut grignoter pour l’apéro ou manger sur place. Mon regret: le succès est tel qu’il faut y aller à la bonne heure pour avoir une table ;-)

Visited with my Sherbrooke friends while passing through on our way to Quebec City. They loved this spot and I can see why — cheeky branding, excellent beer, and really great food. If I were a local, I’d be here all the time. Awesome.

J’ai trouvé ce pub sympathique grâce à Unilocal.Bonne bière triple belge brassée sur place. Soupe du jour et entrée «pâte à pizza» savoureuse. La prochaine fois que j’ai affaires à Sherbrooke, j’y retourne c’est certain.

Great casual ambiance with brewery equipment on display. Beer sampler is a great way to try the many microbrews. Beers were more on the malty side with low IBU values.

Établissement central de la ville de Sherbrooke, le Siboire s’est imposé comme le géant du centre-ville depuis quelques années. Le bar s’adapte à toutes les occasions: que ce soit pour étudier le jour, pour manger à 19h ou bien pour l’échapper jusqu’à 3h du matin, vous serez invariablement conquis. À la sélection habituellement de 7 bières brassées sur place s’ajoute les saisonnières et une 10e ligne qui change plus souvent. Bien que le bar soit très grand, sa popularité fait en sorte qu’il peut être difficile d’y trouver une place pour un groupe: arrivez tôt! Ambiance charmante à découvrir. Seul point négatif: la nourriture est assez chère et peu variée, on fréquente surtout le Siboire pour la bière.

Café by day, bar by night: go-to hanging out spot for college students in town. Beers brewed in-store served on tap. Seasonal taps available. Food menu is a little more expensive than what we would expect, but portions are hefty.

Sherbrooke has two brilliantly repurposed train stations — one is Marche de la Gare, and the other is Siboire. Now, if you’re a unilingual anglophone, you won’t get the joke, but Siboire is a clever Quebec French pun. «Si boire» means«if you drink…» which starts many of the witticisms on the coasters, and«ciboire» literally translates as «ciborium» which is something in a church, but it’s used as an expletive in Quebec, as that’s how Quebec’s obscenities are composed. So when I heard the name I laughed my ass off. But that’s not the point. It’s the beer that matters, and Siboire doesn’t disappoint. My only regret is that I had only the one night in Sherbrooke and by the time I got to Siboire both my host and I were starting to feel pretty tired, and it was a one beer kind of trip. It did let me try a couple of beers though as we traded. My host said the food’s good but I didn’t get the chance to try it — it’s also a great place to watch hockey apparently. The bar was definitely packed but did have good service for the crowd. Definitely worth it, ciboire!

Excellent beer which rotates regularly. I have never had a beer that I didn’t love at Siboire. The food menu is small but also excellent — I have had nachos, salad and frites. All delicious. They also have pizza and a few other things. Free wifi and plenty of space, with a small deck in summer. A real gem in Sherbrooke.

The Microbrew culture in Sherbrooke is going strong and Siboire is one of the best! I had been there before for beer but last night was the first time I went there for food. It’s located in the old Canadian National Railway station that still partially serves as the Intercity Bus station. Parking is no problem, there is free parking for Siboire customers between 4PM and 4AM while the parking garage next door is avaiable during the day. First, the most important, is the Beer. I had 3 pints, one of their Oatmeal Stout, which was excellent, nice and rich but not too heavy and flavourful. Not quite as good as St. Ambroise’s Oatmeal Stout because it is a bit too watery, but still great. Then I had a pint of Calvaire, which is their signature Pale Ale. It is a great pale ale that has a good hoppy bite. Finally I had the Ingenieuse, which is an Irish Red ale that is fairly sweet for a Red but still very tasty. The Food was very good, I had fish and chips that was very good. You get to choose the kind of fish you want and get 3 pieces plus fries and coleslaw for $ 15.00. The fissh was nice and moist and the batter good, blus the fries and coleslaw were excellent(some of the best slaw I have had). Definitely worth the money. The Service was also excellent, the waitress was attentive and very friendly. This is one of my favourite places in Sherbrooke and I hate saying this but it is actually a better pub with better beer than my beloved Golden Lion in Lennoxville. I apologize to all my fellow Bishop’s Grads for saying that but it is true.

Completely unassuming restaurant, located at train station, behind the main street. Easy parking in the garage for $ 1. Very cute inside. Great windows and seating. Great attention to detail. Great glassware collection displayed. Also connected to a cute café with croissants and coffee. We sat at bar for drinks and lunch, on our way to Quebec City. Bartender was very friendly and helped us with French vocabulary. Split the Beer sampler– all very good. For lunch I had the Pizza with black olives, red pepper, blue cheese and mozzarella. It was, of course, delicious. This place was not expensive, we enjoyed great service great food, and c’mon, it’s a brewpub– they make their own beer and offer a sampler! Loved it and would definitely come back!
