This was one of my top 5 restaurant experiences — a three hour meal that left a deep impression. A tour-de-force of Mallorcan local foods delivered in artistic forms by people who really care about food. The restaurant is on the Protur resort campus in Sa Coma. We ate at 7:30 and were the first in the restaurant. We were offered seating in one of four venues, two outside, two inside — one near the kitchen(behind glass) where we sat. There was no «ordering» per se, we briefly discussed wine pairing which was more an affirmation«if you don’t like one of them, you can change it…» sort of a claim of deep humility about the food. Our waiter also discussed how many of the grapes are unique to Mallorca. We then embarked on a tour of four pre-meal snacks, each delivered without need for utensils — one was on an herb infused light foamy cracker, one on a spoon, one was an tiny fried olive egg in a basket of olive leaves, each one was amazing. We started to get the idea — this was going to be A: long, B: amazingly constructed, C: tasty. First course was a block of tuna in a tomato water with small bits of gel that had enhancing flavors. We were given a sharp serrated knife, which gave a satisfying feeling of the texture of the tuna — it was almost granular feeling. Very tasty, perfect temperature. There were perhaps seven more courses, filled with smokes, foams, but not overboard on the molecular gastronomy, beautifully balanced. The wines were amazing — I took pictures of the many glasses — perhaps five whites and two reds. I have some pictures of the food that I’ll post to give you an idea — artistry and excellent service and the tastes were diverse and amazing. I think the whole meal was 250 € or so — I think it’s worth four times that.
