One of the best dining experiences I’ve had in Spain(or the world, for that matter). This small, elegant restaurant is tucked away on a quiet side street in Valladolid. If you were not looking for it, you might pass it by completely. The interior is equally unassuming, with simple, modern(yet comfortable!) décor, a warm palette of golds and browns and gentle ambient lighting. The most dramatic décor element is provided by individually vased tufts of moss placed at the corner of each table. When we were there(around 9:30PM on a Thursday), the restaurant was nearly empty. In other places this might make for a slightly awkward or isolated dining experience, but at Trigo it felt exclusive and pampering. Trigo’s menu evolves with the season and their winter selections were outstanding – from the orange-pumpkin starter to the amazing mushroom and truffle pasta(my favorite course!), to the entrees(I tried the rabbit, which was tender and hearty and not at all gamey), and even the wine(a clean Ribeiro from Galicia). The service was also excellent and very friendly and after our dinner we stayed to chat with the chef and his wife for a few minutes. Dining at Trigo was the highlight of our trip to Valladolid and I am very tempted to return just to experience Trigo one. more. time.

La comida está muy buena y equilibrada. Es cocina de autor con productos de temporada. Tienen una buena carta de vinos. La atención es exquisita pero el servicio no es tan bueno: un poco lento y con deficiencias. Según la carta, el menú eran 25 euros, pero nos cobraron 30. Esto estropea todo la anterior. Así nunca seremos europeos.
