Last summer I saw a customer open the door to leave as I walked by, and in went a rat! A rat in Castle Pines! Both the customer who left and I looked at each other in disbelief! She went back inside to let the managers know and the rat finally ran back outside. Thinking that was perhaps a strange occurrence, I have wanted to try their food. However, lately, I have seen a large refrigerator chained up outside for the past several weeks. At first, I didn’t think it would be in use as there is a Goodwill Donation center right next door to the restaurant. However, I heard it running and saw it plugged in! As I walk by here often, I have also noticed workers going outside to unlock and retrieve food from it! I have since reported this to the county health department.

Great Great classic Mexican food. I love the pepper jack cheese dip! Tacos carbon were great, and the fajitas were large tender slices of meat, just really all around good food. Friendly staff, the food was served quickly and hot. What more could you ask for? Will definitely be back!

Pretty good Mexican food considering the suburban location. The chicken fajita burrito is delicious… highly recommend!

The restaurant isn’t what it used to be. Staff spends more time chatting amongst themselves than giving customers some attention. Food went from pretty good to fair. Bummer because Castle Rock needs good, reasonably priced, independently owned restaurants. We’ll keep trying; just not as often.

Food was mediocre. We got fajitas for two. Beef was tasty but overcooked. Margaritas were half Price but Also half diluted. Probably would Not go back. Waitress was friendly and efficient.

Very good. Small intimate, good food and quick. My go to Mexican place No bad food here but love shrimp fajitas. Service is very good, the owner waits on you most days. Did not try margaritas.

Good chips and salsa was very tasty. My spouse ordered chili relleno and specified soft. Also asked waiter if they used chili poblano for their chili relleno said, he assured us they did. She also ordered a cheese enchilada. I ordered their special which was chicken, rib eye and a cheese enchiladas along with corn tortillas. The grilled chicken and steak were very good. Unfortunately the rest of the meal had issues. The chili relleno was the crispy type and the chili used looked and tasted like a canned Anaheim chili, was not very good. She could not eat. A bit pricey for what we received. Both of our cheese enchiladas were not cooked enough for cheese to even melt. They put red sauce on and served. Also, not good at all. They brought flour tortillas instead of the corn requested. Waiter didn’t check with us to be sure everything was prepared to what ordered. They were not busy so there were many opportunities to check with us as to how was everything. We should have been more persistent in returning our plates when we noticed they arrived incorrectly. When he brought our check I mentioned and his response was they would put more attention in the future rather than offer reduction of bill or any other type of possible solution. We have eaten at other location and always had a pleasant experience. May try them again in hopes of having better service, food, etc. We have had much better Mexican food in other Mexican restaurants in Castle Pines and Castle Rock.

I can’t say it’s THE best Mexican food I’ve ever had, but I give it 5 stars for being my favorite restaurant in Castle Pines/Castle Rock. The service is great, the place is clean, and they are so friendly. We always order the choose 4 combination plate and we get all 4 crispy chile rellenos with cheese sauce(they use a creamy white cheese) and their rice and beans are yummy. We share because it’s a lot of food! We are moving to Denver, but I would definitely stop in and eat again if we’re in the area.

Good mexican food. Chile rellanos are my favorite but combos are good too and lots of food. Top shelf and classic margarittas are great. Few can beat this place for mexican food!

We were hungry while on our to Denver and took a chance here, knowing nothing about the restaraunt. I had the best chili relleno I have ever had. The shredded beef tacos were good too.

I’m a laid-back person and I didn’t even have a Unilocal account until tonight. And then I went to Las Fajitas. Not ate, mind you, went. We put our name in for a party of 4, including 2 kids. The staff proceeded to seat multiple parties of 4 or less in front of us. Honestly, I didn’t even notice at first because I was trying to entertain our 2 year old. A kind gentleman noticed and did say something. The actress, I mean waitress, I mean actress, posed some sympathy, but nothing came out of it. Empty tables still remained unseated while we waited up front. We finally left. I just wanted to give others a heads up about our experience and note that this may not be the place for family dining.

We went tonight for Cinco de Mayo. Thinking it would be a great place to celebrate it was anything but. We were there for two hours. VERY little service, food was cold, margarita had no tequila and cost $ 9.00 and we had to ask for tortillas for the fajitas! VERY disappointed that there were only two people working. When asked about the margarita I was told, «Well, it is house.» Awful.

I was brought here by a friend who swears by the fajitas. I have to say, I was not disappointed. Unfortunately, I was driving so I didn’t have a margarita, but they do serve them. We got the steak fajitas for 2. I think the«for 2» option is great. It saves you a few bucks and you don’t have 14 plates all over the place. The meat was well cooked, it had great flavor and was tender. The sides were also equally as good. The rice was fluffy with good flavor, the guac was yummy and so was the salsa. I’ll definitely be back.
