My husband and I tried the bacon a few weeks ago and we agree that is the best bacon we have ever had! Overall Revival Meats offers the best tasting, highest quality pork you can find in the city of Houston. We can’t wait to try the beef and lamb!

Amazing meat from a great company. Morgan is very good at what he does. The difference between their wonderful juicy fatty pigs the way they’re supposed to be, from the grocery store crap you get that has zero fat, flavor, or juice is amazing. Their pigs are the way God intended them to be eaten. I just hope to get some of their bellies and backfat for curing soon! Can’t wait to see them every week at the Eastside market.

This is tricky, as it should be four stars, but only four because he never has enough meat for me. He raises two breeds of pigs, Mangalitsa and Gloucester Old Spot, and they are both great tasting, but the Old Spot is a lot less fatty and much more flavorful. With pork this good it is always an idea to try it without anything on it to get the base taste and I do not recommend salting anything this good, no matter what Mason tells people; black pepper or some cracked mustard seed are more than enough. Great people, wonderful pork, just in short supply as they sell to the nose to tail restaurants, so the next time they slaughter an Old Spot, I am just going to buy half of the entire pig and not have to run around farmer markets chasing the odd chop for about 6 months.

If you’re looking for local meat with an ethical bent, Revival Meats is for you. The operation is comprised of a husband-and-wife duo(Morgan Weber and Stacey Franklin) who are truly passionate about what they do. All animals are raised free-range on Revival Meats’ farm in Yoakum, Texas, in a hormone-free environment, and slaughtered humanely. The revivalists take the charge«know yoru farmer» seriously: they invite their consumers to visit the farm to see the operation firsthand. This approach to raising animals doesn’t just produce meat with a clear conscience: it produces some truly tasty pork and beef. I stopped by Revival Meats’ booth at the Urban Harvest Farmers’ Market this past Saturday, where they had an array of pork available that week. Stock will change based on what’s in season or what’s been slaughtered recently, so go with an open mind. After following these folks on Twitter for a little while I was excited to finally get to try the food. I chatted with Morgan about what would be appropriate for the kind of cooking I wanted to do, and picked out two pork chops for me and the man. He let me know I should take them out of the vaccuum packs, salt them and put them in the fridge for best eating. I cooked them up yesterday and GOTDANG they were amazing. Flavorful, with a fatty ring of fatty fat fatness protecting the chops from drying out during the cooking process, I’m positive I’m already a repeat customer, even though I haven’t been back just yet. NOTE: The address is a mailing address for the business, not a storefront. If you want to order, you’d be better off calling or emailing, or seeing them in person at the farmer’s market. Trust me, you’ll be glad you did.
