One of the worst and most disappointing dining experiences possible. We made reservations for a party of 13 in advance and when we arrived they did not have our reservations never mind have the table ready for us. Ever since this place changed management this place has dramatically gone down hill. Besides the food the most disappointing part of our experience was the inexperienced staff who is unfamiliar with the menu. I can’t imagine it will remain open much longer given the restaurant was empty and the numerous advertising signs in the window to draw customers in. Save yourself the money and frustration and make a pizza at home. It has to taste better than this place.

Carbonella used to be the spot for delicious coal fired pizza in the hudson valley. However, since the ownership changed the food is completely different. The pizza is not the same. The nice chunks of motzarella cheese and fresh sauce have been replaced with ingredients used in chuck e cheese pizza. The owners are nice guys but i am disapointed in the quality of the food and desperately miss the old Carbonella.

Ever since the new change, the pizza is not the same at all, the dough is bland and unsalted, the specialty pies have too much on them and it just gets all floppy and gross. I used to come for the plain pizza because the way they made it by putting the cheese first and then small circles of sauce on top. It was perfect and I would drive an hour just to buy a small pie at least once a week. Now the plain pie is the same as everywhere else, with the bland dough and the mama pie is a let down as well. Their sauce is no where near as good as it used to be. Place has changed, unfortunately. I hope they can maybe implicate some of what the old owners did, and bring back the regular crowd.

Ordered 2 pies was hoping I was gonna love it! Pizza looked like it was done… a little burn marks on crust… The dough was RAW!!! I was pissed! It sucked! The only thing I can think of it said it was under new management? Well! The new management better learn how to cook a pizza or they will be out of business SOON!!!

Do not get the calamata olives on a pizza unless you want to go directly to the dentist. For some reason they leave the pits in the olives on pies. Not very intelligent. Wings were dry. They should marinate them if they are going to cook them in the coal fired oven. I felt like a caveman eating meat off a fire. Pizza was good. Not out of this world. Go down the road to Cosimos.

Sorry to give only 2 stars because the food is pretty good at Carbonella’s. The take out service, however, stinks. A few months ago my husband ordered the broccoli rabe & sausage pizza, Grandma’s pie and some wings. I stopped to pick it up and they gave me the Grandma’s pizza and a tin of sausage and broccoli rabe. I knew we were ordering 2 pizzas but I called my hubby just to be sure. Yup. He ordered it as a pizza, not a side. They were very perplexed because they’ve never made that type of pizza before, according to the guy at the register. So I waited 20 minutes while they dumped the contents of the tin onto a pizza and cooked it. Not a big deal, chalk it up to miscommunication. So when I get home, I open the wings and I ordered ½ hot, ½ not and they were all naked with the sauce on the side. Again, not the end of the world. Funniest part is that the broccoli rabe sausage pizza that they have never made is actually the photo on the front of their menu! That’s what made my husband order it! So it must have been an off night and we like their food, so last week we order again. I was very specific about splitting the wing order in two and mixing the hot ones IN the sauce. Well, they did get that correct but didn’t add in the flat bread and onions which make their wings different and delicious. We also felt the amount of toppings on both pizzas was pretty sparse. Especially since it costs almost $ 60 for 2 pizzas and an order of wings. I don’t mind paying a little extra for food that is good, but not when they’re going to screw up repeatedly. Sorry Carbonella… we have to break up. And it’s not me, it’s you.

This place sucks. I ask for extra crispy pie and it comes out undercooked. It was a sloppy pile of chewy cheese. It was over priced for the quality. The heros are hit or miss. I understand its hard to find good pizza in upstate ny but Im done giving this place a chance. I literally threw out a couple slices of the last pie i ordered because it skeeved me out.

Absolutely fantastic pizza! All fresh ingredients which seals the deal. The pizza we had was bursting with flavor and the crust was spot on. Do you know how hard it is to find a decent pizza place? We we found one that went up and beyond what we were expecting. Totally worth the 20 minute drive to get to.

The wings are amazing! A unique coal fired experience. Comes with foccacia and sauté’d onions. Both the garlic parm and buffalo were equally good. Their wings deserve a segment on food network! The majority of our pizza experiences here are good but occasionally off. such as garlic overload on grandma pie. Overall we love carbonella.

I recently went back here and sadly the ownership changed. So did the prices and portions. Prices went up and portions got smaller. My waitress wasn’t there. Anyway the food still tastes great but what I used to get for $ 7.95…½ marguerita pie, ½ salad and cup of soup is now only the ½ pie and cup of soup. Outrageous.

This place is a little nicer than your average strip-mall pizzeria. We got the coal fired wings – half garlic & parmesan, half buffalo – both were exceptional. We also had the arugula and prosciutto pizza, which was made with high quality ingredients, but got a bit soggy from a splash too much of the(albeit delicious) fig balsamic. Our kids enjoyed the regular pizza, as well. I mopped up a little of their pizza sauce to try it, and it tasted very fresh. We’d definitely go back when passing through the area again.

I have to say this place was hyped up and maybe it was just a slow lunch but I wasn’t impressed. I will try it again but wasn’t impressed. The waitress was like 12 years old and spent more time flirting with two boys in the restaurant rather than carrying about me the customer. the pizza came and… well the crust on the outside was cooked but the pizza really wasn’t. The cheese needs to bubbly hot and the pepperoni needs to be cooked not just heated up so the flavors never had a chance to mature. Like I said, I will go back but my first try was not great.

It was good. The pizza was OK — I felt the margherita pizza had too much cheese, but my husband liked the BBQ chicken pizza. The service was good, the waitress/bartender who helped us was very nice and attentive.

Eh, so so. Food was good. Service was slow as there was only one server on the shift. Two would have made all the difference in the world as the one server was in constant motion but not enough manpower to cover the demand. I won’t be going back in the near future.
