I am in the frame of mind to start the year off right and step one of my plan is to improve my health. I recently read a book called«Wheat Belly» by William Davis, MD. It taught me that the wheat grown today is so heavily modified and altered that it is harming people’s health and even leading to early deaths for many. I have suffered from so many ailments throughout my life and a huge majority of them are left undiagnosed or unexplained. This book contains a list of diseases and symptoms, A-Z, attributed to wheat consumption. The book is thorough in explaining the pros and cons of eating wheat, listing alternative flours, providing success stories, a few recipes and easy-to-remember lists of foods to consume in unlimited amounts, limited and rarely-consume amounts. Dr. Davis suggests a wheat free diet for 6 weeks to witness the benefits yourself. On 12−15−15 I started consciously avoiding wheat as much as possible. Restaurant food is difficult to avoid 100% because wheat flour is used in so many items that you take for granted. I would order a cheeseburger but not eat the bun, avoided macaroni and cheese, bread, gravy, breaded or battered anything. I ate salad items(without crackers or croutons) at every opportunity. 12−29−15 I have lost 10 lbs, my skin(face, arms and feet) has become very smooth and supple. I do not use lotion as there is no need for it. The fine, frayed and painful cuticles have disappeared. The most exciting aspect has been the improvement in my intestinal tract(cramping and the other unpleasantness after meals). Eating at home has consisted of eggs, chicken, wheat free pizza(Bob’s Red Mill WF/GF pizza crust mix) and wheat free biscuits(Bob’s Red Mill GF biscuit and baking mix). I do not get hungry or have junk food cravings. Most days I don’t get hungry until 6:00 pm or later, and when I do eat, the servings aren’t very big. Dr. Davis does say, once you are free of wheat, your body will help you dictate the proper amount of food needed; that means there will be times you eat very little and other times you may eat twice as much. My personal examples: I had the salad bar at Ruby Tuesday and I ate 3 plates of various greens, apples, eggs and sunflower seeds until I felt satisfied. Today, I have eaten 1 slice of GF pizza and am satisfied(that’s been my only food intake today). I recommend this book to anyone suffering from health issues of any kind or those looking to lose weight. I will review the individual gluten free products that work for me, after using them multiple times; when I can testify to quality and their ability to consistently make an edible/palatable end product. This link is a great cheat sheet if you don’t want to read the book Just a side note: prepackaged gluten free foods in grocery stores are not necessarily a lesser evil. Check the ingredient list for excessive sugars or chemicals. Stick with whole foods as much as possible. Dr. Davis has written a follow up book or an updated version, «Wheat Belly Total Health» but I haven’t read it.
