I have never met Cynthia Gallagher in person, but I’ve encountered many of her cakes and they are beautiful and delicious! I’ve attended and coordinated several weddings in San Antonio where she has provided the brides and grooms cakes. Cakes arrive on time, assembled and decorated perfectly, and aren’t too sweet. Her buttercream frosting is probably my favorite in town but I’ve tried several of her cake and frosting flavors and have yet to be disappointed. Despite the low number of reviews here on Unilocal,she gets a ton of business and books up fast– and for good reason. Pricing is competitive, too.

We ordered the Italian crème cake and chocolate mousse and both were delicious! Everyone and I mean EVERYONE loved our cake! It was so delicious and moist PLUS it looked amazing. Thank you for the great service! Sadly our venue (the st. Anthony hotel) lost the top part of our cake but we will order another one just for the memory! Definitely a top baker for wedding

So I’ve been debating between posting this review or not, mainly because Cynthia is a very nice person and I am sure she has done a great job on many cakes. However, this post is mainly concerning those who have dietary needs.
My fiancé and I are both vegan. We scheduled a tasting appointment two weeks in advance to try a vegan vanilla cake. When we showed up for our appointment, there was no cake to taste, however Cynthia had showed us she recently got a vegan cookbook and would be experimenting with some recipes. We went through and designed the cake, were told we were her first vegan clients and she was excited to start offering vegan options… however asked us if we could come back a few weeks later to try the vegan cake. Because she was so friendly, we decided we would come back, only it had to be on a weeknight which was really inconvenient for us because of our job schedule, but we made it work.
So fast forward to the day of our [second] tasting. We show up, and she asks me if I brought the contract (that I thought she would have had a copy of, seeming that it is HER contract) and I said I forgot it amongst the rest of the day’s chaos. She then begins to tell me that yesterday’s customers were vegans and wanted to try a banana cake and a carrot cake, so we got to try yesterday’s leftover vegan cake.
No vanilla cake, for the second time. But she said, NEXT TIME she will work to make a vegan vanilla cake. I am sorry, Cynthia. Though you are very friendly and personable, and I am sure you are very skilled baker when it comes to generic cakes, you cannot possibly expect me to come back a third time. I do not have the time to waste when there are dozens of other bakers in San Antonio willing to accommodate our dietary needs and have the cake ready when it’s supposed to be.
So I am very irritated:
1. My vegan vanilla cake that I’ve been requesting for over 6 weeks has yet to make an appearance.
2. The cake I was given was a day-​old and made for ANOTHER client.
3. How is it that I am responsible for YOUR contract. Why not make a copy?
4. My time has been wasted, two times.
I am sorry Cynthia, you are very friendly, however this is the world of business. And you just lost mine.
I just wanted to post this review for other fellow vegans out there. We are people too, and if you cannot make a cake that suits our dietary needs, then please just say no and not waste our time because you can’t keep your orders organized.

I’ve sat on this review for 6 months.
I cried when I saw our cakes. I still get teary when I see our cakes in pictures. Because they were so so so wrong.
Every single time I went in, I had to remind her what I wanted. I had to walk her through the design every single time. I had to remind her of colors. She never knew where her notes where. I emailed her pictures three times. I even emailed her a recipe for the grooms cake.
Then, to get a discount, she made me go to a wedding show (after I had already sworn off them since everything was done), and I had told her such, that I would literally only be going to see her again. She still made me go. Then, after driving around for parking downtown, paying to enter, having to give contact info to get in, I walk straight to her booth to get the discount and then leave. I go in to our next meeting and she asked if I enjoyed the show. I told her for the third time how I literally only went for her, and she said ohhhh I would have given the discount anyway! You shouldn’t have gone just for me!
Flash forward to the wedding.
My cake was not fondant as specified, but butter cream. That means the paint brush effect I wanted didn’t happen, but was spray painted. Also meant I payed for fondant, and didn’t receive it.
The grooms cake… was a poor man’s version that I paid full price for.
It was supposed to be a smores cake with graham cracker cake, marshmallow fluff icing that should have been torched with a blowtorch, and a chocolate ganache filling. I literally emailed twice and printed and handed to her once a link to Martha Stuarts recipe and a picture of what we wanted it to look like.
What we got was a chocolate cake with a white icing that was spraypainted to look torched.
It was hideous. And I wasn’t the only one who thought so.
To be fair, they tasted good. But cake mix from the store tastes good. You pay for the design.

My review is a little late but because our wedding was in 2011 but I still brag about how incredible our wedding cake was to this day. My mother still talks about it fondly and photos of the cake have been «repinned» on pinterest hundreds of times. I would not consider any other bakery in San Antonio.
Since our wedding I have used any excuse to use Cynthia again. Birthdays, parties at our house, etc. Absolutely outstanding. I cannot sing her praises enough. Not only are her cakes delicious and beautiful, she is such a nice and talented person to work with.

4 STARS! The cakes were phenomenal! Customer service was top notch. Cynthia met with us and not only laid out all her options and pricing but she had every type of cake and icing available to taste. During the design process she pulled out her colored pencils and drew out an actual render of what we were wanting. This made us feel comfortable with using her over the other places we tested.
The white cake was moist even two days later. The chocolate cake was even more amazing in richness and flavor. Our wedding cakes each had fresh strawberries inside. Her marshmellow icing is incredible in lightness and soft sweetness.
Their prices are very fair and she offers cake stands and delivery. I recommend her for any type of cake. She does 3D cakes like seen on Cake Boss. From trucks, to sports, super heroes and more, her grooms cakes are creative and one of a kind!

We got our wedding cake from Cynthia and we were very pleased! The cake turned out perfectly and the ordering process was easy and seamless!
We were both a little clueless as far as serving size and fondant versus icing and she helped us make the right choices for both. She was able to make all of our designs in icing and the entire cake was so delicious!

My wedding was April 15^th 2011. Cynthia was the third person I met with during my cake testing process.
She made the cake testing (which was amazingly yummy) easy and the cake design portion was fun! She actually took the time to draw out what I was describing to her (with colored pencils– super cute) so that I could see what we were creating. She was the only person that did this for me!
My cake was sooooo beautiful! and of course the flavors were out of this world. I was most nervous about the grooms cake. My husband is a musician and I wanted a replica of his Gibson guitar.
She brought that dream to life! The guitar looked SO life like and it turned out to be my FAVORITE flavor of all of them (chocolate of course-​w/​a chocolate mousse!)
