Real good BBQ restaurant/brewpub with a nice sized tap list and almost a ceiling high shelf with bottles. Pricing was pretty up there compared to the portions but definitely a lot of flavor with each dish. Impressed with the local VT beers and all the farm to table VT goodness. Beef burgers and even the pulled pork and pork patties were delicious. Loved the double fried wings and all the different styles of BBQ sauces.

Man was this one a disappointment. I live in Burlington and a big hobby my girlfriend and I have is eating in as many local Vermont restaurants as we can. Prohibition Pig was one that for one reason or another we never got to. The hype was massive, everyone recommended it highly and I don’t consider myself picky so I was excited. Unfortunately I will never go back. I got the burger and it was so average that is was painful. It was very small once cooked(¼lb) which I assume is before being cooked. My girlfriend got the sliced beef brisket and it was incredibly dry. They best part of our meal were the sides. The fries and beans were great, I really enjoyed both of those, but the burger and brisket were not good in our opinions. There are so many places that I enjoy in Vermont that I will not be visiting The Prohibition Pig again.

Over-priced brew-pub catering to hipster poseurs(the type that wear lots of flannel and have never lifted an axe or a chain saw in their life). $ 11 for a BBQ burger(a dollop of pulled pork on a 4oz patty) and NOFRIES(they are $ 4 extra for a small order of shoe string fries) and $ 16 for a salmon salad(dinner portion) and we both left hungry! I will be the first to say I don’t drink — and can’t appreciate the fineries of — craft beers, so I drink a mass-produced crap beer. What I have an issue with is paying $ 5.50 for a draft glass of Schlitz! Not even Bud… but Schlitz? $ 5.50? Yeesh. A lot of money for«meh»…

Oh, Prohibition Pig! You had me thinking about you all night long! My friend and I stopped in for lunch and a couple of beers on a busy Saturday after snowmobiling. First we went to the brewery in the back, but quickly shuffled to the restaurant in the front because we wanted more of a dining experience. The restaurant side was busy, but things were moving quickly so we didn’t wait long for a table by the bar. The beer list here is awesome — there’s a little bit of everything and they feature other beers like Hill Farmstead. For lunch, I got the brisket sandwich with cheddar grits on the side and my friend got the chopped pork sandwich with the duck fat fries. Let me first say that the food was ready in a matter of minutes. My brisket was absolute heaven! The meat was super tender and flavorful and the crispy onion straws pulled it altogether. And let’s talk about grits, man. Probably some of the best that I’ve had! Creamy, cheesy, gritty the way they should be — really good stuff. The pork sandwich was just okay(he had definite food envy) — the pork was a little on the dry side, but still good. I never have anything bad to say about duck fat fries — they are everyone’s friend. If you go, definitely put that Bacon BBQ sauce on everything — it’s amazing! Excellent beer, delicious food, good service! You can’t beat Prohibition Pig. Go here!

I’m surprised at some of the past reviews! My husband and I ordered Bavarian pretzel knots, twice fried dry rubbed wings as appetizers and salmon Grundy sandwich and had a burger with bacon, egg, pimento cheese, fried green tomatoes and beef burger. He had an ale and I had an applejack rose. The drinks were phenomenal. The wings are on point and the Bavarian pretzels are good. I always think pretzels are over salted but that’s the only complaint. The salmon Grundy sandwich was so satisfying. I saw complaints about how the burgers are too small. I liked the small size because i didn’t overeat and yet felt full. The salmon was perfectly cooked and glazed with this amazing sauce. And the roll it was on reminded me of sweet rolls. The atmosphere was great even though we sat next to a loud crowd. Definitely coming back! They have their own bacon bbq sauce that is out of this world. I gotta buy the sauce!

The Prohibition Pig is both a restaurant and brewery, with two distinct entrances. My wife and I ate and drank in the brewery side after a long slog from Boston. A drool-inducing array of Vermont’s finest craft beers can be had at the Pig. Yes, they serve Hill Farmstead. Yes, they serve Alchemist. Great atmosphere, tasty food selections, and the beer. You’ll remember the beer.

5 stars for the beer, 2 for the food. Rounding up because the beer is amazing, and the service was good. Every beer sampled by their brewery was incredible, and they have a nice selection of other breweries, like Alchemist and Hill Farmstead. However, both times here the food has been really underwhelming. The Chicken Biscuits were a highlight, but it’s tough to mess up fried chicken and biscuits. Burgers are small, the Mac and cheese with pulled pork was dry, and everything just seems overly greasy. Again, good service and atmosphere, and a phenomenal beer selection.

Competently good Northern barbecue, but not BBQ, not Southern, and not outstanding. That said, this far north, and in Waterbury of all places, what do you expect to find? So an upscale take on traditional Southern recipes isn’t actually a bad thing. I’m just a food snob. But do expect to spend a bit. Pimento cheese balls: Probably the best thing on the menu. Crunchy crack. Not that Southerners ever move to Vermont, but if they did, this would be their staple. Pepper jam unnecessary, just pop ‘em in. Some sort of mac ‘n’ cheese: What did I even have? Hard to remember. It was supposed to have all these good ingredients in it, but the flavors never came together quite right. My girlfriend ordered a salad with pulled pork and got a giant tureen of very plain pork. Completely unflavored, so a definite minus there. Yes, you’re supposed to use the sauces(I’ll get to that in a bit), but the meat needs to have flavor and juice to it. Anyway, I took her extra pork and added it to my mac, and that made it superb. Hear that, Pig? Menu idea. Sides: I got the maple baked beans, which were very unremarkable. I added sauce to make them better. Very little maple flavor. Meh. I don’t even remember the second side, might have been a special. I think there was maple mustard of some sort, and that was nice. Sauces: Four kinds, nothing quite what I wanted. Clear vinegar, not even a sauce. Spicy East Carolina vinegar was the class of the bunch, if you’re into that. Hot sauce is just hot sauce, not BBQ at all and not the taste you’re looking for. The bacon BBQ is their«standard» sauce, albeit one that’s way too sweet and contains pig meat. They need a regular red sauce. Also one sauce that’s not spicy so that everyone can enjoy. Drinks: Nice selection. Many beers on tap, and they do «fake flights» of half pints. They got my third half pint wrong but were nice enough to take it off the menu and gave me two small pours to confirm which one I got. Sadly never got a «full half» of the vanilla porter, which I’m told is the best. 3.5 stars overall. I wouldn’t go back, but if you’re looking for a slightly nicer dining option or something you can’t find elsewhere in Vermont, it’ll satisfy.

One of our favorite is the Staff Meal salad, which it’s farro, Brussels sprouts, hazelnuts — you can imagine the flavor mix and texture. The dry rub wings have a nice crusty exterior. They come with pickled carrots.

Prohibition Pig is great! I had been anticipating finally coming here for quite a while as I had seen its menu while searching for places in VT last time planning a vacation. Got here around 4pm and there was a decent crowd but we were able to be seated right away. The atmosphere and place itself is set up for an upbeat, casual, fun, and comfortable time. The menu had so many delicious choices it was so hard to narrow down what I wanted. As with most bbq dishes some can be pricey(17 – 19) but they also have some cheaper options with sandwiches, burgers, and small plates. I went with the chicken and biscuits. They were served as three sliders and had a honey butter melted on them. This dish was heaven. I dipped it in a little bacon bbq sauce for a little added zing and it was just amazing. My date had the chicken dish with beans and coleslaw. The chicken was very moist and flavorful. She loved it. I was able to have a can of the illusive Heady Topper with my meal which made my day as well. I can’t wait to come back to try more menu options and try their beer. This is an absolute must try and a new favorite spot of mine!

My husband and I stopped here after many great reviews from other traveler friends. The first thing I noticed was that this restaurant was a bit pricey. We started with the pork rinds which were delicious! My husband got the pulled pork sandwich and I got a salad. The pork did not come with a side and the salad was a bit on the smaller side. The service was just so-so. We ended up getting our check from another waitress who saw we were finished because our waiter was no where to be found. I could excuse it if they were busy, but we were only one of two couples in there. The only reason I would return here again is just for the beer menu. Great selection.

If you’re on IG and want to drool every time you scroll through your newsfeed than start following the Pro Pig. If you’re lucky enough to be anywhere near the vicinity of this restaurant, then you should make it a point to come here. I mean, come on. What’s not to love about beer and bacon? Not only do they have a mouth watering selection of food but their beer ain’t too shabby either. I tried two of their house beers; their coffee stout and brown ale, both of which were great. I was also lucky enough to try Lawson’s Sip of Sunshine and Focal Banger by The Alchemist; two phenomenal brews. As for the food, I went with the GILT. Guacamole, bacon, lettuce, and a fried green tomato. Needless to say I left the Pro Pig a happy man. Game, set and match. Cheers!

Food = yes. Definitely. All the way. My favorites were the ducket fat fries with truffle oil — the menu didn’t mention the truffle oil but I sweeeaaar it was there — and I’m not complaining. Gluttonous, yes. But you won’t regret it in the moment. We also really enjoyed the wing special — covered in a honey-like sriracha sauce and sesame seeds and cooked to perfection. I could have made a meal out of the fried chicken skin. Lastly, the splurge-worthy mac n’ cheese topped with pulled perfect(perfect for sharing — large portion and you’ll probably have a heart attack half way through if you try eating it alone). The crispiness of the cheese on the noodles is what did it for me on this dish. Service = meh. Unfortunately, we kept having to hunt down our waiter for basic things like a eating utensils and a mistake on the bill. Setting = it’s hard to beat downtown Waterbury’s charm paired up with the Prohibition Pig’s attract façade and interior.

It was my last day in Waterbury. I made sure to check out this place for lunch before heading for home. Apparently there’s two sections, a restaurant/bar in the front and the brewery with outdoor seating and food service in the back. I went to the front and it was already pretty crowded for lunch. Fortunately, I was able to find a seat at the end of the bar. After looking at their tap list, I saw that they brewed their own line of beers, but they also had on tap all of the local favorites. Their lunch menu was simple, not too extensive. They seemed to be short staffed, but the solo bartender was quick and more than able to keep up with the orders. *Prohibition Pig Vanilla Bean Porter* I started with one of their brews, a vanilla bean porter. I love a good vanilla bean porter and this one was not bad. *House Burger* For my meal, I ordered their House Burger cooked medium and topped it with an egg cooked over easy. I also added a side green salad. The burger included pimento cheese, fried green tomato, and applewood smoked bacon. The burger was on the smaller side(¼ pounder), but it was really good, juicy and full of flavor. The salad included mesclun, tomatoes, cucumbers, pickled carrots, and balsamic vinaigrette. I’m glad that I got the salad instead of fries. It went really well with the burger. *Lawson’s Sip of Sunshine* I finished off my meal with a Lawson’s Sip of Sunshine. Now this was a very good IPA. I can see why it has the hype. I’m not a huge fan of IPA’s, but after drinking this one, I just might have to change my mind about IPA’s.

This place is SO doing it right. It’s hard for me to find joints where everything is stellar, but here’s one of them! The service from the hostess to the waitress was excellent. The selection of beers and cocktails is beyond what I was expecting. But the food! Oh, the food. I had a brisket sandwich with duck fat fries and truffle ketchup. STFU. Best fries of my life. My partner tried the chili dog and cheddar grits, also out of this world. The banana pudding with a perfectly brûléed banana sticking out of it made me squee. The fact that they had Cheer Wine as a soda option. Ugh, my God, why do I live so far?!? You can guarantee any time I’m traveling this route, I WILL stop in. It is a MUST.

A favorite stop — and a MUST stop for me — when visiting VT. In fact, I can’t believe I haven’t reviewed before. Both food and drink are excellent. While they are known for their beer list — which boasts their own beers as well as local staples like heady topper, focal banger, and hill farmstead — their craft cocktails are delish. They also have Pappy van Winkle! Food is wonderful consistenly. I love the hush puppies. I love the fries. I love the pickled veggie tray. Just great. Service great. Before Prohibition Pig, there was the Alchemist. Not just any alchemist, but THE Alchemist. When Pro Pig took over the former Alchemist restaurant/brew space, I was interested to see how they would define themselves– and they have continued to exceeded my expectations. Pro Pig has come a long way, a delightful culinary trip that has arrived at excellent bbq pulled pork sandwiches, killer mac and cheese, an array of house hot sauces and pickled vegetables, and now… local beers being brewed on site. The space is warmly lit and cozy and there is always a savory aroma — leaving those who arrived during peak hours salivating while waiting for a table. The menus always feature a quirky twist for a special and they even do brunch. Drinks are readily available and are not just limited to the microbrews — top shelf whiskeys & scotch options are plenty, as well as Caledonia Spirits gins. I’ve been lucky most of the times I’ve gone, but there can definitely be a wait!
