Cuquita’s Tex Mex

Excellent food, we loved the carne Asada tacos and enchiladas verdes! Steak was tender and tasty, enchilada sauce was made from scratch and very flavorful! If you like hot salsa, ask for the hot salsa to go with the chips they bring out. I also really enjoyed the Mexican rice that came with the enchiladas. They could stand some improving on the seating and smell in the restaurant. The cook, (maybe owner?) came out to check on us personally a few times, very nice people!

We were passing through the back roads of MN on our way to the black hills. This was the only business open on a Friday evening in the town. The staff were very friendly, but a bit harried. We never did get a diet coke for the wife. Also, the checkout process was unclear and they didn’t seem to have a way of tracking what happens to your dinner ticket. I had to tell them what we had ordered in order for my bill to be tallied up. They are a new restaurant and I hope that their process will improve as they gain experience.
Now the good part: the food was delicious. I had a pork burrito that took a little longer to come out because they were still prepping the burrito (they kept me informed of the delay, so no big deal). Definitely worth the wait. The wife had a green chili and chicken burrito (not exactly what was ordered), and it was very good. The tortillas were nice and flavorful, and then chicken juicy and tender. The kids had quesadillas which were also tasty.
At the end, before the check confusion, they also brought out very tasty chocolate cake for dessert. I have travelled in Mexico, and grew up on this type of food in California; this restaurant knows what it’s doing to make very good food.
If they can get their service process under better control, I thin that they will have a viable and successful business. They just need to place billboards along I-​90 like Wall drug and they will be busier than they could ever dream.
If you are traveling on 90, they are only about 5 min off the freeway to the north; worth the small detour in my opinion.
