This unpretentious little bakery was totally worth the trip to Saltspring island all by itself. We tried both the sweet and savory tarts and they were just superb — delicate, buttery, flaky, and flavorful. Quality like this is rare in big cities, much less in little Ganges BC. I asked Brigitte if she learned to bake in North America. She blanched and said«It’s not possible». She said learning to bake like she does«is cultural.» And she learned in France. Makes sense to me.

Good coffee, specialty teas, & Brigitte’s amazing pastries: croissants, fruit tarts, quiche, petits fours, specialty cakes… very French & very delicious. Practice your French conversation with Brigitte & Bruno, just for fun! Lucky us, that they’re on Salt Spring. And yes, you did see them at the Saturday Market in the Park, & at the Tuesday Market on Hereford. Lucky Islanders!
