Para mi gusto, es el lugar donde he probado la mejor birria en Guadalajara. La tortilla recién hecha y el ambiente de Mercado acentúan el platillo. A mí me encanta doradita la carne, además hay variedad de alimentos relacionados con la birria.

This is one of the top two birria spots in Guadalajara. Just don’t tell anyone because it is already super packed everyday of the week. They way it works is they make a huge pot of soup and serve it until they run out. I went today, and they were done by 1pm. I have snuck in later before, but this place has been really busy lately. These guys have been make birria for generations. I think one of the reasons that they have such great birria is the ‘tatemado’ oven. They give the meat a little searing on the burner before it goes into the broth. There are a lot of fatty cuts and the searing really brings out the flavor in the fat. It is really affordable, but not cheap. Birria shouldn’t be cheap because it is primarily meat and you want good meat. I am pretty sure this is a goat only birria place which means that I don’t think that they have birria de res. There is a bomb juice place right across the aisle so get a pineapple/orange mix and get your birria on.
