They are constantly scouring through the marronis being cooked, checking if there are any bad or burnt ones. Since there is a high turnover of marroni at this location, you worry less about those little marronis sitting in the heating container too long and being dried out and/or burnt. Like many other locations selling marroni, this one also offers a «socially responsible» marroni bag — brown bag split with two sides. One side holds the marroni, the other is for holding the empty shells, so that you are not littering the streets of Zurich. Not every location offers a socially responsible marroni bag, I recall I was shocked at the bag over at the Paradeplatz location when I received a bag without two sides — the shocking controversy!
