Had the armadillo chalupa and green iced tea. Chalupa was delicious and the homemade salsa has just the right amount of kick. 3 types of fresh breed iced tea is awesome for a trailer. It’s the little things. Buffalo Bob and his wife are very friendly and charming.

Fantastic! LOCATIONALERT! Buffalo Bobs is now near Lake Travis, on 3639 Ranch Road 620 N. TX78734(catty-corner to Hudson Bend road). We had the Santa Fe Chicken Chalupa, it was amazing. Fresh greens, onions, and the shredded chicken was moist and delicious. The homemade salsa was the perfect addition. Plus, it was gluten free. The owners were really friendly and there was talk of live music soon. Will be a regular from now on :).

Found this location on a gluten free app. Was excited to try out a food truck on our Austin trip. Bob and his wife personally man this booth and we were the only people here for a late lunch on a windy week day. Bob was able to recommend his favorite based on mine and my husband’s preferences. Where I come from(Cali) these are tostadas, but man was it good! It just tasted fresh, light and healthy! Both hubby and I gobbled it up along with our blueberry milkshakes. Bob chatted with us about the history of his food truck, very friendly and great customer service. We sat at a picnic bench conveniently located right by his truck. It’s so nice to have such unique GF options!

I’m really glad a found the Chalupa Wagon. If you are cruising down 1st and needing a bite I highly recommend this spot. I didn’t go for awhile because it seemed a little one dimensional. Just Chalupa’s? What do I do with that? Well now I know. You eat it and then you have another. If you’re really hungry two will do you right. Most times I think one would do me just fine and for a quick seemingly healthy bite it’s hard to beat. First, it’s a really firm, crispy, flax-seed enhanced tortilla. I wasn’t so sure it would hold up but if definitely does. Part of my aversion is that I somewhat think of a chalupa as a soon to be broken taco. Not here. Buffalo Bob really gets a lot of flavor on these and he features the healthy side. Perhaps if you want loads of meat and cheese he’ll do that up for you but I liked that I was getting an appetizer, a salad, and an entrée all on one round disc. I did both a bison and a chicken and found them both quite good but the Parisian Chicken was my favorite. This went from an I’ll try it once to an I’ll be back often.

Lovin’ these food trailers in Austin and this one in particular. I ordered the Bison Chalupa and it’s gluten free, yay!!! It was absolutely delicious, definitely spicey and messy to eat but worth it. The freshly brewed green ice tea was brewed perfectly as well. It only cost $ 5 for the Bison Chalupa and I was full after one. If you are extra hungry, order 2.

Ate here last week and enjoyed every bite. I had a gluten free bison meat chalupa made by Bufalo Bob himself. The shell was crispy, the bison meat was flavorful and fresh, and all other toppings(beans, tomato, lettuce, and cheese) were fresh. The chalupa was loaded with stuff and the shell didn’t break making it easy to indulge without make a huge mess. I also had the homemade hummus, salsa, and chips combo.(Gluten free too) The stuff was great. I left full and satisfied but didn’t feel like the food was sticking to my stomach. Thank you Mr. Bufalo Bob!

I really enjoyed the«Armadillo» chalupa w/extra added jalapenos. The Armadillo featured bison meat and traditional tostada toppings(cheese, matoes, lettuce) I was not sure what a chalupa was and was hoping it was not like the soft, flat bread filled gut bomb that Taco Bell provides. To my gleeful surprise it was like a big curved tostada with a crunchy tortilla foundation. The bison was fresh and mild tasting and all of the other ingredients were also fresh and crunchy. The service was indeed prompt and kind and the nachos(one big tostada with melted beans, cheese and jalapenos) looked yummy. After a walk and a few hours passed, I did not feel the food clinging to my stomach — a good sign that it was light and fresh! I will definitely be back when I’m in the area again!

This is my new favorite food truck, and I can express all the joy I had finding this place with one little phrase: BISONCHALUPAS! That’s right. Who would ever have thought that such an outlandishly delicious combination could exist here in Austin. I recommend the Armadillo Bison Chalupa with a few Bison Nachos and cup of his freshly brewed black tea. The veggies on the chalupas are super fresh, and his salsa is actually spicy enough to have a character and personality of its own(unlike 99% of the tasteless excuses for salsa that I’ve tried in this town). The side of his truck is decorated with a huge mural that celebrates Austin’s finest musicians: Willie, Stevie, and all the greats(including Bufalo Bob himself) are riding in on a wild pack of armadillos who are surrounded by a heard of Unilocaling Chihuahuas. Amazing. Great food. Cool location. Bison chalupas.

Two thumbs up! One from me, and one from my Hubby! We love tasty healthy eatin’, and folks, this is where its at! I had a Chicken Chalupa, and the hubs had 2 bison chalupas. The chicken was stewed, not grilled so it stayed on top of the hard corn chalupa base. It was very tasty. One filled me up, but the hubs decided to get an extra. Very affordable, we left there with an $ 12 tab. Dog friendly, so bring your furry friend. The owner takes pride in his local eaterie, and is very friendly to walk you through his mural of local musicians on the back of his trailer. We were pleasantly surprised at the fresh toppings, and will return soon!

The Chalupa and I go way back — — when there was no internet, the McIntosh was the desktop of the future, and Unilocal was a zygote. I really haven’t had a good Chalupa since back then, so when I came across Bufalo Bob’s Chalup Wagon I jumped at the chance to check them out. I was first introduced to the Chalupa by my BFF’s mom while growing up in Michigan. They were gracious enough to invite me over on a monthly basis for Chalupa night. I had no clue as to what a Chalupa was, and my BFF’s mom wasn’t Spanish, but she was a great cook who won me over in with her awesome recipe. I remember leaving their dinner table with napkins piled high, and I loved it so much that I frequently asked if I could be adopted. I found Bob’s trailer on S. Lamar near Barton Springs and I was intrigued by the variety as he offers something for everyone and has taken the Chalupa to a whole new level with creative options such as: bison, hummus, and chicken. I tried the Armadillo(bison) and the Cretian(hummus) to mix it up. I was only planning to take one bite for the road since since I was in a rush, but it tasted so darn good that I had to sit down and enjoy the experience. I think the Armadillo was my favorite, extremely flavorful and healthy too — a winning combination. Bob was very nice and patient and provided excellent customer service. My order was completed in a timely manner, and the quality and taste of his Chalupa is top notch. My BFF’s mom will be happy to know that I finally found a replacement that’s close to me, and now I can stop harassing her for adoption.

RJ and his lovely wife, who’s name i missed, have a great thing going with their little trailer. The selection is vast, their meats are naturally raised and free range, and their vegetables are fresh. I also learned from another customer standing at the window that their delicious hummus and face punching salsa are home made. No, seriously, that salsa knows karate. After scanning their menu which had more than a few delicious choices, I settled on the«Cordoba,» RJ’s proclaimed favorite. Hummus, Flax Seed, Bison, Onion, Spinach, Tomato, Parmesan Cheese. Let me just say, you don’t taste the flax, or even know its there. Consider it just an added bonus, a +5 on your healthy eating for the day. The bison itself had great flavor and the whole dish left me wanting more and most importantly, not feeling weighted down. In short: with homemade quality, a great selection of chalupas that are both healthy, and tasty, and great company; you can bet I’ll be coming back, with friends.

Hmmm… so not a chalupa like Taco bell… this is more like a tostada. It is always hard for me to recover when what I get is not what I expected… at all. I recovered quickly to enjoy an amazingly fresh, Laredo style bison chalupa. Everything was hot and truly, it tasted so fresh. The Bison was fabulous yet was underseasoned as has been mentioned by others. Maybe it is salt that I am missing. This statement will send the sweet owner into cardiac arrest, I’m sure(SORRY!!!) The owner and his sweet wife are wonderful. He is a warm healthy man that wants nothing more than to spread his tasty, healthy kitchen creations with the world to help everyone be healthier! What a great heart and soul, this man glows with joy that he has found the answer to so many health problems — go gluten free, eat extra antioxidents and buy fresh natural products. This isn’t rocket science but from looking at the lines at the drive-thru at those fat and salt death dining halls, a lot of people just don’t get it.

Arrested Development has really made this chocolate banana craze explode, but sadly, it also draws the would-be chalupa eaters away to indulge in its potassium rich cold good. These crispy chalupas contain unique toppings that also happen to be homemade, gluten-free, and fresh. Furthermore, many ingredients are local, including the awesome healthy corn tostadas from the Houston area. The ground bison was a little underseasoned, but it reminded me of a delicious Taco Bell meat. Nice and gamey. The European provides nice freshly chopped spinach and tomato along with a tasty hummus. The Armadillo Nacho had a nice spread of refried beans and cheese. Also served on an extremely crispy tostada, the nacho was extremely unique and filling. The best part about eating here is hearing the input from the owner. He really has a lot to say about food systems, food allergies, and food production. It is almost like having a dinner party… at a trailer… eating chalupas, but it is cool listening to a passionate healthy eater.

I hosted a UYE at Bufalo Bob’s earlier this month and was excited to try my first food trailer! Bufalo Bob is super nice, as is Mrs. Bufalo Bob, and the food is fresh and delicious. I ordered the Cretian, which includes bison and a ton of veggies, like spinach, tomatoes, and onions. You can taste the difference between these chalupas and other restaurants or store-bought chalupas, as they weren’t heavy on the stomach. I didn’t try the salsa, but apparently it has a massive kick so beware! Bufalo Bob has a Texas hummus that is like nothing you’ve ever tasted before, so be sure to try some. Free refills on tea. They have a nice sitting area behind the trailer. Cash only unless you spend more than $ 8, then they take credit cards. I’ll be back for more!

Thank you so much Bufalo Bob! I always get excited when I get introduced to new veggie options and this place definitely has some great ones. I had the Texican and although he tried to warn me that the hummus might be a bit spicy, it was fantastic. It had great flavor, texture and was not too thick. The chalupa was piled high with lettuce, olives, hummus and cheese and it even had flax seed! He stepped outside just after I finished eating and I was a bit embarrassed because I practically inhaled my meal. Bravo Bufalo Bob! Bravo!

Having first been exposed to the chalupa in a school cafeteria years ago and barely having survived the debacle… one could imagine my hesitance at trying chalupas again in the same life span. Having stopped by one of our favorite trailers(Bananarchy) for an afternoon snack, we noticed a new trailer situated in the parking lot nearby. Chalupas… memories flood back, but then I see people seated behind the trailer devouring some spectacular looking food. With that, I knew I would give chalupas a chance. Boy am I glad I did! Bob(the namesake) was super helpful and friendly, and prepared us some fantastic food. My fiancé and I ordered a chicken and buffalo chalupa respectively. Both were amazing, but the buffalo really shined as unique! I’ve never had such well-prepared buffalo meat(Granted places that do prepare buffalo are few and far between, but still awesome), and I’m already anticipating my next meal! Some other tips, guys: 1) Bob’s Texas hummus and salsa are both his own recipe! Make sure to try them, so tasty! 2) The food here caters toward health, minimal grease involved! Instead the foods are packed full of various spices! Felt great after the meal, not weighted down! 3) Woah guys, gotta give a shout out to Bananarchy right next door, follow up an awesome lunch with a great dessert! 4) Nice ‘stache Bob!

Healthy chalupas? Wha? If you’re looking for the super-greasy-will-induce-a-food-coma-for-a-couple-of-hours type of chalupa, you’ll be sorely disappointed. Bob’s chalupas are not dripping in grease or fat. The ingredients he uses are fresh and flavorful and leave you full and satisfied without the pang of remorse you usually get after eating a typical chalupa. Buffalo vs Chicken? DEFINITELY the BUFFALO meat! Bob said that he might either try a different seasoning on the chicken or phase it out b/c the buffalo outsells the chicken 5:1! Texas Hummus or(Regular?) Hummus? TEXAS Hummus :) I’ve never tasted a hummus quite like this one, so be prepared for something different! Bob’s salsa is spicy and not for the faint of heart. Granted, it’s not a get your heart pumpin’ n’ your brow sweatin’ spicy, but it does hold a bit of firey flavor. Blueberry smoothie: Nice, simple, and not too sweet. mmm! Bob came out to the back porch to check up on me and my fiancé to see if we were enjoying his food. He’s a really nice guy(w/an AWESOME mustache btw) who’s just trying to put out a healthy alternative to what’s out there. He took a lot of time and care to choose ingredients that won’t block arteries, increase blood pressure, or fluctuate blood sugar levels. Huzzah Bob!

A trailer serving tasty, low fat and healthy Mexican street food 2 blocks from TL hike and bike trail = 5!!! We headed over after an after work walk around the lake armed with our 5.00 aDelio coupon worth 10.00 to check them out and was super impressed with the extensive menu before even ordering! Bob(a super friendly guy by the way) uses local produce and meat free of hormones and antibiotics. You can choose from Vegetarian, Chicken or Bison with 6 different chalupas for each and there are even several that are gluten free and high fiber made with flax seeds. Aside from what you would expect on a Chalupa you can choose to go with hummus, green olives and spinach and Parm! We decided to get 1 of each. The Vegetarian Traditional with refried beans, minced onion, lettuce tomato and cheddar cheese was simple but piled high with fresh veggies on a super crisp tostado served with a spicy side of salsa and only 3.25.(When working downtown this will be my new go to for a light and cheap lunch!) The Armadillo was topped with refried beans, rice, Bison, lettuce, tomato and cheese 5.50. For the chicken choice we decided on the Parisian topped with Hummus, flax seed, chicken, onion, spinach, tomato and Parmesan cheese 4.75. Bob takes the lowly chalupa and makes it both healthy and gourmet!
