SPECIALEXPERIENCE — SUPPORTTHESTUDENTS!!! This is indeed Cobleskill’s best kept secret! It is the dining establishment staffed by culinary students from SUNY Cobleskill and let me tell you, they do a fantastic job. My daughter has gone to the college for several years and in the past Coby’s was only open 8 – 4 M-TH(more like a café) and on Thurs night for dinner from 5 – 9(featuring live music and dinner rivals very nice restaurants at a much more reasonable price). Well, the last time I was driving through town I noted they are now open on Fri night from 5 – 9 for dinner service! This should be people’s mainstay Thurs and Fri night dinner choice! Tonight when my boyfriend and I picked my daughter up to take her home for the weekend, we had the pleasure of dining here, We were warmly greeted and seated by the hostess in the window, which was fun to watch the passing scene. The menu, while limited to 5 – 6 selections for entrees, has something for everyone. Lots of nice appetizer options for lighter fare. They also have wine, which I did not realize and enjoyed some chardonnay. Our server Jess was terrific and attentive, proud to tell me about the culinary program and what they do there when I asked. The rolls are excellent — they are like a cross between a biscuit and a roll, and we just loved them(and got seconds!). Entrées come with a nice side salad with choice of dressing. BF had crabmeat stuffed shrimp over pasta with alfredo and spinach. The shrimp were plump and tasty. Daughter and I both had the parmesan dusted chicken cutlets — a delight over flavorful risotto. Food was all beautifully plated — presentation was lovely making it a feast for the eyes as well. Normally we do not get dessert, but we have to try this out because hey, it is part of the culinary student program and sounded great. We tried the Mississippi Mud Pie and the Chocolate Raspberry Pâté’. Both delectable, rich and flavorful. BF had his standby chocolate ice cream which was scooped by a most generous hand. Excellent service, delicious food, reasonably priced, nice atmosphere — amazing it is not busier. Some tables had reserved signs on them, but we went right in at 5 pm. A MUSTTRY — NOT A DRIVEBY! Occasionally they have pairing dinners such as with beer, mead, or wine on Fri night and I am sure those are really exceptional — might be worth driving out for that. They have a Facebook page so you can be notified of menu, specials, etc.(My daughter says that students can use a meal swipe and Coby cash to pay for meals here and she has been several times for lunch with friends and enjoyed.)

Driving down I-88, thinking, «where on earth will I get a good cup of coffee out here in the middle of nowhere?» Unilocal saved me again. But it’s more than a coffeehouse with pastries, which if what I was expecting. It’s too bad that I’m not hungry because the menu looks interesting, but the latte with extra shot was spot-on. The fruit salad was a little disappointing — I think it may have been from a frozen mix, but I’m not taking down a star for that. You have to be willing to get off of the interstate for about two miles, but you don’t have to backtrack to get back on. There are ramps on both ends of the village. If you have a few minutes, Cobleskill is one of those villages that the interstate bypassed. It was saved by the SUNY campus here. It’s clean and cute and worth a little diversion from the eternal, gorgeous farmland of I-88. Note to staff(all culinary students?): smile and practice smiling even if you’re shy!

Had a great piece of salmon and some dessert here a few weeks ago. I went during their Thursday/Friday fancier dining at night for dinner. Totally caught me off guard since the place is in Cobleskill, of all places. They had live music too, and for the price, the salmon was great. With a meal swipe(I live on campus) and CobyCash it was cheap-ish for the food we got.

The coffee and bacon were excellent. The pancakes … They expected me to consume an industrial byproduct: corn starch. I would’ve just blown it off. However, there were signs about healthy eating and Coby’s affiliation with SUNY displayed throughout this café. How can anyone serving HFCS purport to be a proponent of healthy or enlightened lifestyle?

We went to one of their theme nights called Coby’s Beer Pairing. It was a 5 course meal that paired a beer with each. My wife, who doesn’t like beer, really had a great time and enjoyed it immensly. I of course, got to drink her beer, so I also had a great time! Two items that really stuck out were the Red Snapper Ceviche and the Garlic-Rubbed Pork Tenderloin with Roasted Curry Cauliflower purée garnished with Grilled Pear. They are having a wine pairing dinner this summer on August 2nd. We are definately going!

Happened upon this place by accident and would definitely go back. This is connected to the SUNY Cobleskill culinary program, so students were cooking and serving the night I was there. The menu was small(one side of one sheet), but inventive and interesting options so there were plenty of choices. The blue cheese salad dressing was amazing, as good as my dad makes! I had the lemon chicken cooked under a brick(literally, our server told us) and it was delicious with mashed potatoes and veg. It appeared that this place was more sandwich/coffee shop during the day, but I liked the dinner atmosphere and felt like we were supporting the students :)

Nice coffeeshop but they also have great lunch. Many veggie options! Service is usually pretty good, except for one individual who tends to be rude/ambivalent towards customers. Otherwise great place!

Lovely coffee shop on the main strip in town. Legitimate, independent coffee places seem to be increasingly rare, so Coby’s is a place to be cherished by the local population. Solid breakfast choices come with free, unlimited coffee or tea, of which they have a wide variety of choices for both. Plenty of seating inside and a few tables outside on the sidewalk. Always clean with friendly service. They have newspapers inside, and a flat screen TV which has typically been tuned to Country Music TV, which I guess folks in this area prefer. Could do with slightly more flexible hours, and also not being open on Sundays is a bit of a downer. I wish every neighborhood and town had their own version of a Coby’s.
