Good flavor — small portions. Had their«large» Chicken and Sausage Jambalaya today for lunch. It came in a 12 oz styrofoam cup. I asked if it was the large and the server confirmed that it was. The flavor and spice was very good although the ratio of rice to meat was a little heavy on the rice given the price. For $ 6.25 plus a $ 1.00 tip this is way too small in portion size. I’ll be hitting the vending machine in the break room.

Another«new to me» truck at the Fort Worth Food Park. I’ve tried their catering but this is for the truck. Tonight I sampled the Crawfish Etoufee. Nice consistency(not too wet, not too dry), tender veggies(including large mushrooms that may or may not be canned), plentiful crawfish, and not too much filler rice. The roux was slightly on the soupy side but improved with a couple shakes of Cajun seasoning from their selection of hot sauces and other seasoning spices for self-serve. \ Verdict? Safe for my out of town guests but a bit mild for me. But service is fast and friendly and I will return to try other advertised yummies as the table next to me was raving about their po-boys and boudin balls and alas, I was too stuffed to try another dish.
