One of the great pleasures in life are the taco stands you see in the parking lots of various businesses and work sites around town. This particular stand, in the Rodriguez Tire Shop parking lot, makes the most phenomenal taquitos al pastor you will ever find. I was first introduced to al pastor about 10 years ago down in the Valley on a trip to S. Padre. We happened upon a little restaurant that shared space with a bus station and the lunch special on the board read«Tacos al Pastor». Unfamiliar and adventurous I tried them and was blown away. This stand serves them up just the same, three little soft corn tortillas filled with a spicy mixture of chili marinated pork, pineapple cilantro, onions, and a squeeze of lime juice. Add either the red or green hot sauce, fold, eat, and wipe your chin clean. When they say to stop and smell the roses once and a while, I think they might be referring to these little gems that mostly go unnoticed on the roadside. Give ‘em a try, you just might be surprised.
