Wow, the biscuits! The biscuits are really high quality with perfect consistency. They’re flaky, but also fluffy and have a good amount of butter. Biscuits and gravy is one of my favorite breakfast items, and Seattle Biscuit delivers. There is also some other creative breakfast items like the biscuit cocktail. It was a pile of biscuits chunks, fried egg, bacon, gravy, some sort of creamy sauce and grits… absolutely amazing. The prices aren’t too bad considering the portions. Definitely a must try.

The ultimate gourmet«comfort food» — Sam takes biscuits and gravy… And grits(!!!) to an entirely different level! So flavorful, scrumptious and hearty — it was a taste sensation. And the cinnamon roll — I just couldn’t stop enjoying it. Outstanding cuisine. I’ll return for more the next time I’m in Seattle!

Describing the amazing breakfast biscuits is difficult at best. I would have never thought a breakfast biscuit could taste like culinary delights of a 5 star restaurant. But let me reassure you, you will never in your lifetime experience the culinary delight until you sample SAMs biscuit creations. Simply amazing!!! Thank you Sam!

I live near Chuck’s Hop Shop in the CD, so I’ve been to many of the food trucks that do business there. Seattle Biscuit Company is the first one that I would actually look forward to visiting again. I had the Che Biscuit with bacon, eggs, cheese, honey mustard, pickle and apple butter. It was AMAZING.

This is a response to A M., who posted a one star review of Seattle Biscuit Company yesterday because they had few vegetarian options. All A M. really wanted was and egg and cheese biscuit. You would think one would simply ask the nice biscuit gentleman, standing just a few feet away, if they would kindly deviate from the menu. SBC, as well as most restaurants, are happy to please their customers and listen to positive feedback. A M., on the other hand, decides to bottle her frustration, shunning any actual human interaction. Then, in a maelstrom of passive aggressive angst, runs home to taint an otherwise genuine, quality, hard working business with her 1 star Unilocal review. Keep up the good work A M. Your Unilocal career is blossoming.

Seattle Biscuit Company is my go to stop on a Sunday afternoon. Conveniently located outside Chuck’s on 85 so you can grab a drink and a meal. Locally sourced ingredients and hearty portions. What more could you want? Flaky biscuits, fresh ingredients and some pretty interesting combos for biscuits. Sweet pickles on a biscuit? Why not. The Varner is my go to when it is available. Sweet, spicy chicken sausage and even has Beechers cheese on it. Second is the Ché Biscuit. The portion sizes are pretty generous so one biscuit is definitely enough. The services at times takes a while but with so many people ordering around lunch time of course you’re going to get a little backed up. Plan around the lunch rush, not during it. If you want instant gratification go to some place like McDonald’s. If you’re in the area grab a drink, grab a biscuit and enjoy. Chuck’s has seating inside and outside.

This food truck makes enormous biscuits that will put you in a food coma pretty quick. I don’t think they are Seattle’s best biscuits — I wish they were lighter and more flaky but I did enjoy my sandwich: bacon and homemade jam. I have never seen a biscuit sandwich option for just bacon and jam so I was intrigued. I loved the combination of sweet and savory. The bacon was perfectly crisped and the homemade jam was bright and flavorful. Recommended.

I want to love these guys. The biscuit cinnamon rolls are tasty, as are the biscuits w/gravy. BUT, when you’re constantly out of gravy within an hour of opening time, do you think maybe your biscuits and gravy truck should be prepared to make more gravy??? Also, why is the wait constantly half an hour or longer for a biscuit sandwich? I don’t get it.

We had the Willie Lee(tasty, filling, and just messy enough with egg, bacon, cheese, and berry/pepper jam — did NOT have the experience other reviews complain about re: too messy. In fact, what could have easily been a too-much-of-a-good-thing gross mess was certainly not that) and the nuptials(honey and salt, hold the butter). The staff were cheery despite the line and the heat. We’ll be back.

Had my first biscuit today white at chucks hop shop. The sausage gravy was yummy as was the ham on top of it. The flavored are really good. The only opportunity is the actual biscuit. It’s good just needs to be refined a bit as it was a bit dense vs being light and flaky. The taste was good though. Definitely worth a try and a great march to my pumpkin cider.

I make a pretty good biscuit. Not Earth-shattering or life-changing, but filled with butter, flaky, and delicious. You know, like a biscuit ought to be. Which SBC regrettably has not seemed to master. I was at Chuck’s Central District to get my Germany — Ghana World Cup game on, and I was excited to see SBC was going to be the food truck du jour. I checked over the menu, and settled on a daily special: The Smoky Spaniard(biscuit, Sriracha chorizo scramble, onions, mustard, cheese). Sounds good, right? I thought it sounded delicious. But the first bite was… acrid. Somehow something went wrong, and I wasn’t able to pinpoint the culprit. When I pulled out the fillings and went to taste just the biscuit itself, it was fairly flavorless, heavy and doughy, more closely related to Safeway French bread than my beloved biscuits. A biscuit-based food truck is ambitious: they’re not the easiest things to perfect, and fiddly little differences in temperature and humidity can wreak havoc on the rise, but the filling in this thing was inexcusable. I finished the biscuit sans filling, and it did do its job soaking up the game stress drinking, but it’s not something I’d ever be tempted to try again. Biscuit lovers, steer clear. *Edit: it must be said the guys who run this truck are extremely sweet. I was just contacted with apologies and the offer of a biscuit on the house next time, which is truly lovely of them. If I see them at Chuck’s again I’ll maybe try something simpler and update.

They set up outside of Chuck’s Hop Shop in the Central District on Saturday. My boyfriend and I ordered the biscuits and gravy and the cheesy grits. First off, the grits are disgusting. Literally not even edible. I am a fatty, I don’t waste food, we all took a few bites and them threw them out. The biscuits and gravy were, well edible at least. Not good, but we were able to eat it. So I guess that’s a good thing? We had 3 other friends with us, they all ordered something different and were all in agreement, it was gross. The biscuits themselves weren’t great, and all the combinations they made just didn’t work out. Too much of one thing, that overpowered the flavor of something else, etc. I don’t care how fancy, local or organic the ingredients are if the food itself is disgusting. Plus, they’re all a bunch of hipsters.

I stumbled upon Seattle Biscuit Co during a visit to Chuck’s Hop Shop on 85th(the truck is there on Sundays). All in all, pretty darn good — and they DO have non meat biscuits, you just need to ask. These guys could easily be 5 stars if they were more veggie friendly. The biscuits are large(and in charge!), with a buttered top that makes them crispy/flakey. No weird after taste, just good darn biscuit crumb in the center, perfect for stacking eggs and jam on. (Ahem, guys, if you would have some more veggie friendly options on the menu, that’d be awesome. What about field roast — a local Seattle vegetarian sausage company? Seriously, you rock and all, but all that meat is so passé!!). Super nice guys that run the truck, sandwiches made to order. A little on the meaty side, but they do make an effort to source local ingredients, which is a giant plus. I’ve been twice now, both times, pretty good — both times an egg biscuit. Last time, they were so nice, they even gave me a dough ball for my dog. Of course, she’s still talking about it. I do have to say this to the Unilocal community — what the heck!!! How in the world do these guys get low-ish reviews, yet you give a certain *famous* biscuit joint in Portland 5 stars and they literally are the *worst* biscuits I’ve ever had? I’m so cornfused — and I can assure you, I’m a biscuit connoisseur. This are the right amount of flakey/cripsy/tender crumb. That one in Portland(rhymes with Mine State Biscuits) taste awful, have a bizarre baking soda(?) after taste. Seattle Biscuit Co is pretty darn legit, give them the kudos they deserve!

Oh biscuit truck, I wanted to love you. I wanted to love you something fierce but I couldn’t. Any respectable Texan will tell you that there’s something magical about biscuits and gravy when it’s chilly out or a bowl heaped with hot grits slathered in butter… So when I saw your truck, I was excited to finally try out some of your biscuits! I live about five minutes away and lucked out one day to find a parking spot and snag some takeaway. When I got home to tuck into dinner, there was something slightly sour about the gravy which put me off. I ended up scraping off the gravy from the biscuits and salvaging the ungravied bottoms. The grits were under-seasoned and bland. I don’t use much salt when I cook but I found myself using some Earth Balance + salt on them to give them some(any) flavour. I would have returned but it was a long day and I just wanted to unwind. I ended up eating the dry portions of the salvaged biscuits with a couple of eggs but it was definitely wasted money:(

If the biscuit is going to be the signature item, then it better be dammmmmn good — and SBC’s is not. Their biscuits, though monstrous in size, lack the buttery-ness, flakiness, and melty-ness that even KFC biscuits provide. I found them way too dry and dense to be called Southern biscuits. More butter, more salt, less flour, please! I did like their grits(buttery and savory, perfect with a bit of Tabasco) and their country ham was excellent. The maple bacon was too cold and greasy by the time I got to it.

I sought out Seattle Biscuit Company their first week on the road. It was a challenge. I finished up at the South Lake Union Mobile Food Rodeo and decided to grab some biscuits on the way home for dinner from the truck(parked outside of Chuck’s). Unfortunately, I was too late because everyone wanted biscuit goodness that day. That was totally understandable. Sometimes trucks don’t understand the power of their food. I decided that I would come back some other time. As luck would have it, I saw that the truck would be at Hilliard’s at noon the next day. I stopped by and they weren’t ready(again, totally understandable) and I went to Fremont to eat at the pod there instead. Still, I could not resist the draw of biscuits and stopped by on my way home from Fremont. That day, I got The Big Al, which is basically country gravy and biscuits. I must say, the biscuits were VERY good. The gravy, on the other hand, could have used more seasoning and I was not impressed. Still, for those of you who know me, new food trucks in particular get two chances. Running a truck is hard and I get that. I’m glad that I have that rule because if I had stopped there, I may have never experienced the true goodness of their food. On a Saturday, I hit the truck at Oola Distillery on my way to meet some friends at another bar on Capitol Hill. I got the Nuptial(biscuit with honey, butter, and rock salt) and the bread pudding. Both were completely and utterly amazing! The Nuptial allowed me to savor the goodness of the biscuit without being distracted by too many ingredients. The flakey, buttery texture of the biscuit was complemented perfectly by the honey and rock salt. The bread pudding was crusted and caramelized on the bottom and the complexity of the flavors… I can’t even describe it. The bourbon, the whipped cream, it’s just too much! If you see it on the menu, please do yourself a favor and buy it immediately. But that wasn’t enough. I found the truck at Chuck’s the next day and had the Pixie Zombie(biscuit with Pixie Crunch apples, honey, and butter). Now, I just fell out. I didn’t think I would enjoy a biscuit with raw apples. It was off the hook! Those tiny, sliced gems of apples were crisp and sweet. The honey and the biscuit added a combination that was deliciousness incarnate. I’m a believer in the food and I’m glad I’ve been able to catch the truck around town and I’m waiting for David and Sam to come back ’cause I need me some biscuits! The customer service has been good. David and Sam are very nice, and everyone else on the truck has been great as well. Social media interaction with individuals has been great but trying to find the truck isn’t always easy. I think part of it is that they don’t have a truly«regular» schedule and those of us who are now addicted to the biscuits are constantly looking. I’m sure the bumps will get worked out and I’m looking forward to seeing the truck more around town.
