This is a new food truck. I’ve been informed that they will be at Stay Golden Social House every Thursday, as explained to me by the two chefs running the truck, the menu changes every week, sometimes daily. So every time you come to see them you can try something different, and with what I tasted today, I have to say that I will be excited to try what they come up with each week. While talking with one of the chefs, he explained to me the process of how they make the Cappellini, and I was so intrigued by the thought of an egg they cooked for an hour at a super low temperature. I had to try it. I ordered the dish, and the chef in the truck started to roll out the dough for my pasta! Thats right fresh pasta rolled and cut to order, the pasta had a Peppercorn Romano Sauce and it was topped with the Hour Egg and Truffle Caviar. Let me tell you, the one hour egg really made this dish, texturally, it was amazing, I’ve never had an egg that was creamy before, but it was amazing. I can honestly say that these guys should have a sit down restaurant. I’m sure if they did, reservations would be hard to get. So I’m just going to enjoy their artistry while I can. I saw every dish on the menu they all looked great the one I tried was spectacular, you gotta try this.
