Basically the items we ordered are staple dishes whose basic forms are served in all levels of restaurants, and while we thought we would have a more sophisticated(or at least a tasty) variation of these classics. we got crude, flavorless servings: one after another. Clearly from the positive reviews, it cannot be the case that the chef does not know when he/she is cutting corners and therefore we were insulted that there was no effort to offer us what Quattro must certainly be capable of. Our review is as follows: We ordered 5 items from the menu: FROMAGGIOTRIO: The tomato slices with balsamic vinaigrette were average but the rest was a disappointment. The three described cheese(s) arrived as five chunks of various sizes and shapes but appeared(and tasted) to all be the same cheese. The server could not identify them as ««different,» then apologetically indicated that they were«out» of the other cheeses; they were, all mozzarella. The tapenades and pesto seemed to have good flavor but the portions were embarrassingly minuscule(the size of caviar spoons) — not even enough for two to taste. This appetizer was a disappointment. MINESTRONEALLAGENOVESE: WINTERVEGETABLESOUP, BASILPESTO, PARMIGIANOREGGIANO. I have never(not in a diner, fine restaurant or even supermarket vat) experienced an attempt to pass off straight up canned tomato sauce as genuine stock derived from cooking vegetables. The small amount of overcooked vegetables was not even enough to mask the canned tomato sauce flavor. Had the chef remembered to add the basil pesto it still could not have rescued it. COZZEALZAFFERANO: VANCOUVERISLANDMUSSELS, SAFFRON, FENNEL, JALEPENO, TOMATOANDVERMOUTH: Mussels in warm water(with cold fresh chopped tomatoes on top to give the illusion of a freshly prepared dish). The fennel was so overcooked as to be unidentifiable and tasteless: all of its flavor was left behind in whatever receptacle it had been cooked in. The dish was so flavorless(and lacked any salt whatsoever) it was evident that the mussels had also been cooked elsewhere and transferred into this bowl of water leaving all of their yummy juices behind. The saffron, vermouth and all but a piece or two of jalapeño were also all left behind. Don’t bother saving your bread to sop up juices: it was water… warm water with cold tomato on top. CESARE: ROMAINEHEARTS, ANCHOVYGARLICDRESSING, CROUTONS, PARMIGIANOREGGIANO: Caesar salad: two basic ingredients to get right: lettuce and dressing. The dressing had good flavor, however, the salad was not freshly tossed so the romaine was soft and had lost its crispness; the freshest thing on the plate was the lemon wedge that was place on the side. SPAGHETTIQUATTRO: FORITALIANSONLY: We had never had this dish so we decided to try it. It did have an interesting blend of flavors. However, it was swimming in oil. There was more than a puddle(more like a lake) of oil at the bottom of the bowl. The service: Our server was very sweet; only moderately knowledgeable about the menu and the items she was serving. After we placed our order(which included a carafe of wine), she went to the table adjacent to us and to take the order for a young family(who already had bread on their table) for more than 10 minutes(with our order still in her hand). We sat at our table for better than 20 minutes with only water after which time our, Frommagio Trio, and wine came(at the same time), our bread arrived shortly after. As stated above we did inquire about the identical cheeses. Whether the fault of the server or the chef our meal took over 2−½ hours to complete. There was a long span after the Frommagio Trio, and then the mussels and soup arrived at the same, and then again another large span of time after the mussels and soup before the Caesar and Spaghetti arrived(at the same time as well). We opted out of dessert. Wish we could give a better review, but they didn’t even try. We are upbeat people and enjoy our own company and can laugh about this, but there are so many great restaurants in Whistler. Go to one of them and laugh.

Sorry but the pasta dishes here are pretty terrible. We came here for dinner one night and ordered several pasta dishes to share. 2 of us shared the pasta sampler which included 5 different kinds of pasta dishes. Unfortunately, all 5 were uneatable. First, the pasta was stiff, and obviously bought from some store dried and pre-packaged. I can taste the difference between freshly made and pre-made, and these were ALL pre-made and pre-dried, recooked and served. For the price I paid, that was pretty awful. Second, all of the pasta dishes had no flavor and no sauce on them, it was just like eating plain pasta. There was no substance at all. For $ 60, I could have cooked it myself for $ 5. Service was nice, the only thing preventing me from a 1 star review. The food is absolutely not eatable. Do NOT recommend at all.

The positive reviews and a location in Vancouver all made me think this place might be good. But our group was disappointed. The meal was overpriced and simply not that good. For a nearly $ 30 plate of pasta I would think housemade noodles would be involved. But the pasta seemed like regular dried variety. I had the«giant» meatball. To be fair, it was pretty big. But it was also breaded, deep fried and filled with cheese. Is that really fine dining? The house salad was nothing special. Generic greens with generic hothouse tomato slices on it and plain vinagrette. Service was slow. I hate leaving restaurants feeling like I got scammed. And this would be one of those times.

Excellent service, wine and grapa selection. Must order their starter platter. I tired their lamb chop, which is just the right portion.

This place has good pasta but that’s what I’d come to expect of a fine dining restaurant in Whistler that brands itself as an Italian restaurant. The signature dish of black beans, chicken pasta is good at about $ 20+, and the extra piece of grilled Foir Gras($ 14) is way overpriced.

Outstanding Italian food at moderate prices. Get the meatball!!! We had a large party of eight and were easily seated on a Friday night. The appetizers were very good, and I recall having some delicious buffalo mozzarella. How they actually milk a mean-spirited buffalo to make the cheese is what I wonder about! The wine was just ok. For some reason, I liked the wine at Hy’s a bit more, but it was still good. When my entrée was delivered, I was handed a HUGE meatball that was delicious! Lamb and beef stuffed with gooey cheese on a bed of pasta. Recommended. Prices were not bad compared to the steakhouses we visited. Service was very attentive. Unfortunately, the menu is not online at the time of this review, but Quattros does offer some tasty Italian dishes.
